Pimiento Cheese and Tomato Bites

Ingredients

  1. ½ (8 ounce) package softened cream cheese
  2. ¼ cup mayonnaise
  3. 1 tablespoon finely grated onion
  4. 1 teaspoon Worcestershire sauce
  5. 1 teaspoon lemon juice
  6. ¾ teaspoon dried mustard
  7. ¾ teaspoon hot sauce
  8. ½ teaspoon white sugar
  9. ¼ teaspoon kosher salt
  10. ¼ teaspoon ground black pepper
  11. 1 (4 ounce) jar diced pimiento peppers, drained
  12. 3 ounces shredded sharp Cheddar cheese
  13. 3 ounces shredded extra-sharp white Cheddar cheese
  14. 30 buttery crackers
  15. 1 pint cherry tomatoes, halved

Instructions

  1. Stir together cream cheese, mayonnaise, onion, Worcestershire, lemon juice, dried mustard, hot sauce, sugar, kosher salt, and pepper in a bowl. Fold in diced pimiento and cheeses. Spread 1 tablespoon cheese mixture onto each cracker. Top with cherry tomato halves.
  2. Cheese mixture keeps up to 3 days, chilled and covered. It’s a good dip for fresh veggies.
