Oregon Beer Cheese Dip

Instead of using beef meatballs with my own spaghetti sauce, I use these turkey sausage meatballs. It becomes something fantastic when Cabernet Sauvignon, freshly grated Parmesan, and Romano cheese are added.

Ingredients

  1. 4 tablespoons butter
  2. ½ cup flour
  3. 1 (1.12 ounce) package McCormick® Cheesy Taco Seasoning Mix
  4. 1 ½ cups milk
  5. 1 cup beer, such as an IPA from an Oregon Brewery or your favorite local IPA
  6. 2 cups shredded Mexican cheese blend
  7. 2 cups shredded Swiss cheese

Instructions

  1. Melt butter in large saucepan on medium heat. Sprinkle with flour and Seasoning Mix. Cook and stir 1 minute. Slowly whisk in milk and beer until smooth. Stirring constantly, cook 5 minutes or until sauce starts to thicken. Gradually whisk in cheeses until melted and smooth.
  2. Transfer cheese mixture to warm fondue pot or slow cooker to keep warm, if desired.
  3. Serve with assorted dippers, such as cubed or sliced crusty bread, cut-up fresh vegetables or apples, sliced cooked sausages, pretzels or chips.

To be fair I couldn’t make the recipe as instructed due to only having cheddar cheese. Halved the recipe except the beer (IPA). Added beer little at a time to taste. Came out better than expected everyone loved it. Great recipe and could easily be adjusted to your preference. Will definitely make again with various cheeses. Goes great with fresh baked soft pretzels.

This was fantastic! Didn’t need to worry about transferring to something to keep it warm; I served it in a regular bowl and it was gone before it cooled down! Even the non-beer people came back for seconds.

Followed the recipe except used an IPA from a Columbus brewery. It was a stringy blob of cheese.
