Ingredients
- ½ cup rolled oats
- ¼ cup grated carrots
- ¼ cup chopped dates
- 3 tablespoons brown sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- ¼ cup raisins
- ¼ cup honey
Instructions
- Combine oats and carrots in the bowl of a food processor; pulse until blended. Add dates, brown sugar, cinnamon, and vanilla; blend again.
- Transfer mixture to a bowl and stir in raisins and honey. Roll into 8 balls.

Something is wrong with the ingredient proportions in this recipe. It is way too sweet and sticky. I cut the brown sugar to just 1 T, and it was still too sweet, and the balls were not able to be rolled due to all the honey. I added ¾ cup more oats, and then I could roll them, but they were still too sweet for me.
