Ingredients
- 2 teaspoons vegetable oil
- ⅓ cup chopped onion
- 2 (15.5 ounce) cans lentils, drained
- 1 (14.5 ounce) can petite diced tomatoes, undrained
- 1 (1.25 ounce) package McCormick® Original Chili Seasoning Mix
- 2 tablespoons crumbled goat cheese or feta cheese
Instructions
- Heat oil in large skillet on medium heat. Add onion; cook and stir 2 to 3 minutes or until translucent.
- Stir in lentils, tomatoes and Seasoning Mix. Bring to boil. Reduce heat; cover and simmer 10 minutes, stirring occasionally.
- Spoon into serving bowl. Sprinkle with cheese.
- Serve dip with baked or low-fat tortilla chips or cut-up fresh vegetables.

Loved it!! I made this for s family gathering and they loved it. I could not find can lentils so I used 3 cups of cooked lentils, which I cooked according to the packaging instructions. Aside from that I made the recipe as written and served it warm topped with crumbled feta along tortilla chips. Delicious!! I froze the leftovers to serve with tacos or burritos.
