No-Bake Trail Mix Snack Bars

I love to hike and ride my road bike. I’ve finally mastered a handmade no-bake trail mix bar that stays crunchy after much trial and error. The marshmallows keep the bars firmly attached to one another. I’ve tried other no-bake recipes before, and they’ve all always disintegrated as soon as you cut them.

Ingredients

  1. cooking spray
  2. 1 ⅓ cups crispy rice cereal
  3. 1 cup quick-cooking oats
  4. ½ cup sliced almonds
  5. ¼ cup walnut pieces
  6. ¼ cup dried cranberries
  7. ¼ cup raisins
  8. 3 tablespoons wheat germ
  9. 1 ¼ cups mini marshmallows
  10. ¼ cup honey
  11. ¼ cup light corn syrup

Instructions

  1. Coat an 8-inch square pan with cooking spray.
  2. Add rice cereal, oats, almonds, walnuts, cranberries, raisins, and wheat germ to a large bowl; stir with a spoon.
  3. Place marshmallows, honey, and corn syrup in a saucepan over medium heat. Cook and stir until melted and smooth, about 5 minutes.
  4. Pour the melted mixture over the cereal mixture and stir until thoroughly combined. Press mixture firmly into the prepared pan. Cool until firm and set, about 30 minutes.
  5. Cut into 9 bars and place in individual sandwich bags. Keep refrigerated if the kitchen gets too hot.
  6. Use 1/2 cup dried fruits and 3/4 cup nuts of your choice.

This recipe is AWESOME! I have been looking for a recipe that mimics some from a local coffee shop. These were close but still unique. I used peanuts instead of walnuts and flax seeds instead of wheat germ, plus I doubled it for a 9 x13 inch pan. EVERYONE LOVED THEM!
