Morel Mushrooms

This is one of those traditional recipes that my grandma, mom, and I have all adapted and passed along. It’s a straightforward, tasty casserole meal in the style of a hamburger.

Ingredients

  1. 1 ½ cups crushed buttery round crackers, or as needed
  2. 2 tablespoons all-purpose flour
  3. 2 eggs
  4. 3 tablespoons butter
  5. 20 fresh morel mushrooms, sliced

Instructions

  1. Combine crushed crackers and flour in a bowl. Beat eggs in a separate bowl.
  2. Melt butter over medium heat in a frying pan.
  3. Dip mushrooms into the eggs, then roll them in the cracker mixture, shaking off any excess. Fry in the hot butter, in batches, until golden brown, 3 to 4 minutes per side.
  4. Use any kind of crackers you prefer.
