Ingredients

  1. 3 (15 ounce) cans black-eyed peas
  2. 1 cup diced green chili peppers
  3. ¾ cup diced onion
  4. ¾ cup diced jalapeno chile pepper
  5. ¼ cup diced pimento peppers, drained
  6. 1 ½ teaspoons minced garlic
  7. 1 (16 ounce) bottle Italian-style salad dressing

Instructions

  1. In a mixing bowl, combine the black-eyed peas, green chili pepper, onion, jalapeno pepper, pimento, garlic and Italian-style dressing. Chill the mixture overnight.

This is a great recipe.. and to argue a point with a previous reviewer I think it needed MORE peas which I added. I took it to a party and it was gone super fast. Thanks

Maybe I need to be from the south to get it, but I wasn’t thrilled with this. I tried it by itself as a side dish, and with tortilla chips as a dip (as another reader used it). It seemed all I could taste was this bland bean taste, as though I were just eating a can of beans by itself. Doesn’t make sense considering all the flavorful ingredients, but there it is.

Excellent served with big corn chips. I have made this before. AKA “poor mans caviar”. Took this to work for a pot luck dinner, Had NONE to bring home. It is soooo easy! thanks kimber!
