Mini Meatball Subs

  4.7 – 140 reviews  • Meatball Appetizer Recipes

A simple, straightforward brown sugar blondie. Although you can add different kinds of chips, this recipe has a lovely, chewy caramel flavor all by itself.

Prep Time: 20 mins
Cook Time: 50 mins
Total Time: 1 hr 10 mins
Servings: 8
Yield: 8 mini subs

Ingredients

  1. 1 pound ground beef
  2. ½ cup chopped onion
  3. ½ cup chopped green pepper
  4. ½ cup crushed butter-flavored crackers
  5. 1 egg
  6. 1 teaspoon Worcestershire sauce
  7. 1 teaspoon chopped garlic
  8. 1 teaspoon seasoned salt
  9. 1 teaspoon ground black pepper
  10. 1 (26.5 ounce) can spaghetti sauce
  11. ½ cup shredded mozzarella cheese
  12. ⅓ cup grated Parmesan cheese
  13. 8 dinner rolls, split

Instructions

  1. Preheat an oven to 350 degrees F (175 degrees C).
  2. Combine ground beef, onion, green pepper, crackers, and egg in a large bowl. Season with Worcestershire sauce, garlic, seasoned salt, and pepper; mix well. Form mixture into 8 meatballs. Place meatballs in a 9×13 inch baking dish.
  3. Bake meatballs in the preheated oven for 20 minutes. Pour the spaghetti sauce into a large saucepan; bring to a simmer over low heat. Stir baked meatballs into the simmering sauce. Do not turn oven off. Simmer sauce until meatballs are fully cooked, about 20 minutes.
  4. Place one meatball, a sprinkle of mozzarella, a sprinkle of Parmesan, and a bit of sauce between each roll. Place sandwiches in hot oven; bake until cheeses melt, about 7 minutes.

I followed the recipe exactly and these were great. Wouldn’t change a thing!

I added onion powder and Italian seasoning to the meatball mixture. So good, and my family demolished them- the mini version gave you just the right amount of bread cheese and meatball…great recipe!

I did try this but had to use hotdog buns still worked just fine . As well added a bit of Italian seasoning.

I’ve made this a few times now. My family of 8 all love it and I have even turned it into a giant meatloaf before. The only adjustment I make to this recipe is to double or triple it!

Delicious! The family loved them! Thanks for sharing. 🙂

Followed the exact recipe, but added a teaspoon of chilli powder. Fantastic! Will definitely make a these again.

I made these to have with a romantic partner before a school dance and we made a ton of jokes about having to wear casual clothes while eating to protect our nicer clothes from drips, but we could have been in full white and been fine! Also they tasted AWESOME!

These were good, but it is difficult to get much cheese on them as the buns are so small and the meatball takes up most of the space. The spaghetti sauce needs spicing up (which I did). I also put these in the crockpot rather than simmering on the stove which worked well.

I only needed a very small jar of sauce. The meatballs were done in the oven in 20 minutes so they didn’t need to cook in the sauce. Tasted great!

Made several little meatballs and put them in Hoagie buns. These were delicious.

I have made these twice and both times my husband has led them. I even froze some to take on a trip with friends for a quick meal.

I’ve made these a couple times now. I used pre-made frozen meatballs to save time and they are still absolutely delicious!

Meatballs by their self not the best. Yummy with spaghetti sauce.

Meatballs are delicious, subs came out taking more like spaghetti. Would recommend using marinara recipe or canned in substitute

I didn’t change the recipe too much. I did put half red peppers and half green peppers, to kind of sweeten it up a tad. I also did a combination of turkey, beef and pork instead of just 1 pound of all ground beef. I used a red onion, but that’s just because they’re my favourite. And finally, I was able to get 40 small meatballs out of this recipe. I absolutely love this recipe! It’s not only going to get saved in my favourites, but I’m getting a hard copy into my recipe binder ASAP!

These are AMAZING! I always add a few more spices to all my recipes and these are always a hit. SO SO GOOD!

I’ll definitely make this again! It was a big hit in our house. I used hoagies instead of rolls, & made the meatballs a tad smaller, but otherwise made them exactly as called for, & they were GREAT! Thanks for the yummy recipe 🙂
