Microwave Spiced Nuts

I took my mother’s fantastic microwave candied nut recipe. I like pecans and she likes walnuts. It’s quite simple. When I cook them, my wife claims she needs to leave the home so she won’t eat them all.

Ingredients

  1. ¼ cup butter
  2. ½ cup brown sugar
  3. ½ teaspoon ground nutmeg
  4. 1 teaspoon ground cinnamon
  5. 2 tablespoons water
  6. 3 cups pecan halves

Instructions

  1. Melt butter in a 4-quart glass casserole dish in the microwave. Stir in brown sugar, nutmeg, cinnamon, and water. Microwave on high for 1 minute, then stir in pecans until well coated. Microwave for 4 to 5 more minutes on high, stirring every minute. Spread cooked nuts out onto parchment or waxed paper to cool.
  2. You can experiment with the spices and try cloves or allspice.

Soooo good! I added some cayenne and chili powder to mine for some heat and finished them off with a sprinkling of kosher salt. I cooked mine for 6 minutes to make the butter mixture really thick and carmelized. Highly recommend!

So easy! I used Truvia Brown Sugar and salted butter. Taste so good. Hope there is some left for the salad and baked Brie.

Obsessed with these! They taste super good! I replaced the nutmeg in the recipe with a sprinkle of cayenne pepper to add a little kick, highly recommend! Be careful if you are using a delicate glass bowl and an intense microwave. My bowl is relatively fragile (but is microwavable) and my microwave is quite powerful. The intense heat from my microwave mixed with my delicate glass bowl resulted in my bowl completely shattering in half. These are still so delicious just be careful with the tools you use!

These were great…omitted nutmeg..but added cayenne pepper instead for a kick to the taste…extra minute in microwave..spread on parchment not touching each other..a keeper

I used all Penzey’s Spices and the ground nutmeg was opened just for this (coincidentally). Vietnamese Cinnamon. And added 1/2 teaspoon RECENTLY opened ground ginger.

This is so good – every time I make it it disappears quickly! Because I have family members who can’t eat sugar, I substitute Stevia for the brown sugar (1/2 cup). I use walnuts, pecans, and cashews – a yummy combination.

Quick, easy, delicious and gone. I thought all the proportions were right for my taste. I used walnuts, pecans, and almonds. I also “finished” it in the oven for 12 minutes at 350dF. Love it.

Excellent and super easy! If you decide to toast the pecans prior to microwaving, I suggest 3 minutes. Really easy to burn on a cookie sheet.

I changed nothing. They were fast and easy to make and I always have those ingredients on hand. However, the texture left a little to be desired. They weren’t crispy like they are when made in an oven but I guess that is the trade-off for making them so speedily. Everyone seemed to enjoy them. I will probably make them again.

Was warned by hubby to remove these from sight or he couldn’t make any guarantees there would be any left. I didn’t have enough pecans so added some walnuts, peanuts & sliced almonds to make enough for a batch. Will make these again, but can’t to often for my hubbies sake.

made usig only 1 cup nuts 1/3 of recipe. I used peanuts tasted good and wanted to keep eating till all nuts consumed. will try again using mixed nuts.
