Mexican Lasagna Chip Dip

4.6 – 60 reviews  • Cheese Dips and Spreads Recipes

When the weather is cold in the fall, they make a delicious breakfast. For a “breakfast for supper” night around Halloween, my boys enjoyed to help me prepare a batch. You can decorate the pancakes with any and all embellishments to create jack-o-lantern faces. Try banana slices, raisins, crasins, chopped nuts, or broken candy bar bits.

Prep Time: 20 mins
Cook Time: 15 mins
Total Time: 35 mins
Servings: 18
Yield: 1 9×13 inch dip

Ingredients

  1. 1 pound ground beef
  2. 1 cup diced onion
  3. 1 (16 ounce) jar salsa
  4. 2 (16 ounce) cans refried beans
  5. 2 (4 ounce) cans chopped green chile peppers
  6. 1 (2 ounce) can sliced black olives, drained
  7. 2 (8 ounce) packages cream cheese, sliced
  8. 2 cups shredded Cheddar cheese

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Place ground beef and onions in a large, deep skillet. Cook over medium high heat until onions are soft and ground beef is evenly brown. Remove from heat.
  3. Drain beef and mix in salsa, refried beans, green chile peppers and black olives. Transfer mixture to a 9×13 inch baking dish. Layer with cream cheese slices. Top with Cheddar cheese.
  4. Bake in the preheated oven 10 to 15 minutes, or until cheese is melted.

This is excellent, I put it in small ramekins for individual servings to watch the game. Then the remaining in square container. Worked perfectly. It makes plenty.

Delicious. I sliced the olives and layered them on top the meat and bean mixture. Looked nicer.

This was delicious. I made it with Beyond meat and even the meat eaters liked it!

I made this for a church gathering and everyone absolutely loved it! The only thing I changed was I combined some sour cream with the cream cheese. Also, I poured some Rotel diced tomatoes on top after it came out of the oven.

I used a lb of faux meat crumbles and cooked them with the onion and two packets of McCormick’s original taco seasoning. next time I’m going to mix in scallions and cook in the Crock-Pot sans the cheddar.

Just wanted to add my two cents…. I soften the cream cheese and smooth it out on the BOTTEM of the dish, then a can or two of Hormel chili (beef or just beans), a layer of diced tomatoes, lite layer of finely chopped red onion, lite layer of jalapeño , olives if you like them, I do not, then a good amount of whatever shredded cheese you like! Bake till bubbly , will be gone in a flash!!!!! FYI , don’t use no fat or lite cream cheese, it does not cook well at all, ends up looking like curdled milk, gross…

Flippin’ outstanding, though needs a little hot sauce. I’m a mild food person, but it was not quite right without any kind of kick to it. Once I added a little, it was heavenly!

This has great potential but I didn’t find that it had a lot of taste. Next time I try this I will had a spicier salsa plus some Mexican seasoning mix.
William Martin
Yummy! I added a bit of Taco seasoning.

Great recipe. I took it to a gathering and it was gone quick and when I got home I had to share it with several of the neighbors.

This was a good dip. Tastes just like a bean burritto. I did add a pkg of taco seasoning when mixing everything together. It needed a little something. I sliced the cream cheese really thin because some reviews said the cream cheese didn’t melt completely.

Was a favorite at the picnic!

My husband likes this best without the cream cheese and cheddar cheese. I love it with both. However, I found it very difficult to spread the cream cheese on top (even if you do cut it up) and will just mix it in next time.
Diane Smith
This was a good recipe, but could use a little more spice for my taste. As other reviewers mentioned, this makes a large amount, filling a 13×9 pan almost to the top.

Yum….. Yum…. Yum… Followed the recipe to the letter and it was excellent!

Pretty good dip. Needs more cream cheese and less meat and beans though. That’s just me, I like gooey cheesy. I liked it for a change of pace from regular cheese dip. It made enough I was able to make it on two different days. The first day I layered it as directed. The next day, I spread the cream cheese in a pie plate, then the meat and beans mixture, then cheese. I really liked it best that way. It just went together more smoothly.

This was great-rave reviews! Several asked for the recipe – followed pretty true except used half black refired and half regular

This was a big hit for a birthday party I had. Everyone loved it.

I did not care for this recipe.
