Ingredients

  1. 1 head cauliflower, broken into small florets
  2. 1 (8 ounce) bottle Italian dressing
  3. 1 cup mayonnaise
  4. ¼ cup bacon bits
  5. ¼ cup grated Parmesan cheese

Instructions

  1. Place cauliflower in a large bowl and cover with Italian dressing. Cover and refrigerate overnight.
  2. Drain cauliflower and stir in mayonnaise, bacon bits and cheese.

I cooked the cauliflower in a large skillet with grass fed butter, onions, and garlic cloves to soften the florets. Then put it in a bowl added all the Ingredients. I chilled it and my wife and I loved it. Great as a main or side dish.

Printed this recipe off quite some time ago, made it, wrote notes on the printout but never rated it. It was easy and good. Not necessary to drain the Italian dressing off; add bacos just before serving otherwise they become soggy.

Easy and Delicious!! Loved it! Simple to make. I used 3/4 qtr head, and marinated it in just about 6 oz. I added 1/2 cup of mayo and did not drain the dressing, as there was not much and it helped thin out the mayo. I added the bacon bits, but not the cheese (I am dairy free). Excellent!

We absolutely loved this! I used Greek yogurt so that added protein and significantly reduced the fat/calories. Win, win! I didn’t drain all of the Italian dressing and also added fresh ground black pepper and minced garlic per other reviews. I will make this often. Thanks!

I am making this salad for the 5th time…the first 2 times were exactly as stated…the last 3 have had some minor changes which work for me…1/2 low fat mayo + 1/2 Greek yogurt, add 4 chopped green onions, pinch of chilli flakes, marinated for 2 days….man oh man is it good!!!!! thanks for the original idea….there is never any leftover for lunches…..never!!

I didn’t want over-marinated cauliflower so I cut the amounts of the italian dressing and mayonnaise in half. I used a homemade italian dressing. Three out of four of us thought this was really good–I actually ate the rest as a snack last night. Next time, I might try to make this lighter using part nonfat greek yogurt in place of some of the mayonnaise. NOTE: The longer it sits, the better it tastes–if you have time, try to make this as early as you can before you have to serve it.

I absolutely loved this recipe. Like so many others, I’m shocked that cauliflower can taste THIS good. I used fat free italian dressing, only about a half a cup and marinated for 5 hours. Half a cup of mayo and turkey bacon. Delicious!

I did not care for this recipe. I will try it again but I am going to try blanching the cauliflower before marinating. I think that will give the dish more flavor. I found it very bland.

My boyfriend loves this recipe, he says I can make it any time. I like it too, but not quite as much as him, through no fault of the recipe, I think its just my resistance to cauliflower. It is pretty versatile too because you can use any kind of italian dressing or other kind of dressing, so that can really change it up. Its a great way to get your veggies in.
