Ingredients
- 8 eggs
- ⅓ cup mayonnaise
- 3 tablespoons minced green onions
- 2 teaspoons rice wine vinegar
- 1 ½ teaspoons wasabi paste
- coarse salt
- ½ cup fresh pea shoots, or as needed
- 16 pickled ginger slices
Instructions
- Place eggs in a saucepan; cover with water. Bring to a boil, remove from heat, and let eggs stand in hot water for 15 minutes. Remove eggs from hot water, cool under cold running water, and peel.
- Cut each egg in half lengthwise; place egg yolks in a bowl. Mash yolks with a fork until smooth; stir in mayonnaise, green onions, rice wine vinegar, and wasabi paste. Season with salt.
- Arrange egg white halves cut-side-up on a serving platter. Spoon yolk mixture into whites; garnish each egg half with pickled ginger and pea shoots.
- You can also use watercress if pea shoots are not available.

Nice change up for deviled eggs. One and a half teaspoons of wasabi paste is too strong for me so I reduced it to 1 teaspoon it was still plenty
These were amazing!!!
This might be a good recipe, but if you follow directions and brings eggs to boil and then turn off heat and allow them to sit in water for 15 minutes you will have runny yolks and an epic fail. I had to throw yolks away and saved the egg whites for a snack or garnish.
So great. I didn’t have peapod shoots so I used little pieces of spicy pickled green bean (the kind you’d use in a Bloody Mary).
I used a little less minced green onion (just two stems and the greens only of scallions). I used lite mayo. Also used the scallion as garnish rather than the pea shoots. Otherwise, exactly as is and it looked and tasted amazing!
I will definitely make again. I left off the ginger and pea shoot but sprinkled Spanish Paprika instead. I made the Wasabi paste. Dry Wasabi mixed 3 to 1. 3 t Wasabi and 1 t water makes paste. Mix then turn bowl upside down for a minute. Makes 1 1/2 t just right.
Love this, and it’s a hit with my foodie friends! It’s terrific as is, but if you don’t have pea shoots or pickled ginger on hand, you can mix in 1-2 tsp of minced ginger with the yolks, and use a little triangle of crisp cucumber sticking up out of the middle of each half. This adds a nice crunch. My fav add-in now is to also sprinkle on each a pinch of shiso furikaki (a rice topping that comes in lots of flavors–in this case, red shiso leaf and salt). YUM!

Quite a hit with my Mahjongg friends! One suggestion: mix the mayo, etc. before blending in with the egg yolks, much easier. I sprinkled finely chopped green onion on top, as I didn’t have pea shoots.
Definitely NOT for the meek! Very unique and a refreshing change from ordinary deviled eggs.

I am hooked on this–a great way to cook up the eggs my hens produce daily. The wasabi and pickled ginger really make it pop! I make it with lite mayo. It’s great mashed together as egg salad too. Spoon onto Romaine lettuce leaves and add some diced cukes for a cool, refreshing, healthy meal!
What a great change to the normal deviled egg. I would like to up the wasabi next time to see if I could get a hotter flavor. Love how it looks and would be great to take to a party.

Substituted jalapeno for pea shoots and added a caper or two on each devil egg. These were GOOD !!!
These are a show stopper! I’ve never seen deviled eggs disappear so quickly! They also are an impressive dish to bring to parties!
This turned out better than expected! I love Wasabi but these eggs were still a little strong for me so I will be adding less next time.
