Healthier Seven Layer Taco Dip

I enjoy serving my friends this dip. I do want to make sure that I am providing them with a wholesome snack. I amended this by adding extra vegetables and some beans without added oil.

Ingredients

  1. 1 (1 ounce) package taco seasoning mix
  2. 1 (16 ounce) can fat-free refried beans
  3. 1 (16 ounce) package light sour cream
  4. 1 (8 ounce) package Neufchatel cheese, softened
  5. 1 (16 ounce) jar salsa
  6. 1 large tomato, chopped
  7. 1 green bell pepper, chopped
  8. 1 red bell pepper, chopped
  9. 1 bunch chopped green onions
  10. 1 small head iceberg lettuce, shredded
  11. 2 cups shredded Cheddar cheese
  12. 1 (6 ounce) can sliced black olives, drained

Instructions

  1. Blend taco seasoning mix and refried beans in a bowl. Spread mixture onto a large serving platter. Mix sour cream and Neufchatel cheese in a bowl. Spread over refried beans. Top layers with salsa. Place a layer of tomato, green bell peppers, red bell peppers, green onions, and lettuce over salsa. Sprinkle with Cheddar cheese. Garnish with black olives.

Have made this several times for larger gatherings. Always gets requests for the recipe. I use gluten free taco seasoning and often a can of drained diced tomatoes for the real one just because it is easier…and sometimes better when whole tomatoes are out of season.

Great recipe thanks! Another idea..You can even cut up some spinach leaves to add to the iceberg lettuce for even more nutritional value with this dish and with all the other tasty flavours, no one even notices or minds!! 😉

Absolutely fantastic! The amount was enough for a party and was definitely a croud pleaser. I did not have any green bell peppers or black olives, didn’t think it made a difference. No changes otherwise. Will definitely make it again and again.

Delicious but be aware or portion size. I made this for a football party and no one even noticed the low fat version as it’s so good, but plan on a 9X13 or larger pan for this many ingredients. I use a regular white corning ware dish and had to half the tomato, green onions, olives and sour cream mixture. Thanks for this excellent recipe I will make again!
