This flavorful supper is made with parsnips, carrots, baby red potatoes, red onion, garlic, and rosemary. Use another fresh herb of your choosing if you don’t have any fresh rosemary. I believe you will enjoy them if you serve them with the garlic aioli.

Ingredients

  1. 3 avocados – peeled, pitted, and mashed
  2. 1 lime, juiced
  3. 1 teaspoon salt
  4. 2 roma (plum) tomatoes, diced
  5. ½ cup diced onion
  6. 3 tablespoons chopped fresh cilantro
  7. 1 teaspoon minced garlic
  8. 1 pinch ground cayenne pepper (Optional)

Instructions

  1. Mash avocados, lime juice, and salt together in a medium bowl; mix in tomatoes, onion, cilantro, and garlic. Stir in cayenne pepper.
  2. Serve immediately, or cover and refrigerate for 1 hour for improved flavor.

I read this whole blog recipe a few times. Went to make it…. And then the toddler happened. I got distracted and used the amount of salt the recipe called for. Instead of remembering in the reviews everyone said not to use so much salt. So USE HALF THE SALT and it’ll be perfect! If you end up getting distracted and making the same mistake I did, you can balance it back out a little bit with more lime.

I add a jalapeno or 2 and mint, yes mint. I seed the jalapeno and devein so it isn’t too hot and I add about 1/4 c chopped mint to mine. I knew a woman from Venezuela who made guacamole for me once and she added the mint, I have done it ever since then.

Wish I would have read the comments beforehand as I usually do, but was in a hurry. WAY to much salt! 1/4 tsp would have been more than enough, even using 4 avocados. Going to let it mellow to see if it helps, otherwise it goes in the trash!

Thanks for the recipe! I added 2 serrano peppers and added only 2 pinches of salt. If you’re not a big fan of tomatoes like me, two tomatoes is too much and takes over the flavor of the guac, next time I’ll just use one. Otherwise, great recipe.

Hands down THE BEST Guacamole!!!! This is actually my second time making it two days in a row so I had to leave a review! I omitted the tomatoes and cilantro (not a big fan but I’m sure it’s great with) and added some ground cumin as other reviewers mentioned and did 1/2 tsp of pink Himalayan salt and I must say, WOW!! Even the kids ages 3 & 6 loved it! Hubby was mad that I finished the first batch without him so I surprised him with the second batch. So easy to make and tastes absolutely fantastic!! Thank you for this Heaven sent recipe!! If you’re on the fence, just make it already!!!!

I made this using six small avocados and no cilantro. (I’m one of those people who don’t like cilantro.) I probably used more than a “pinch” of cayenne, too. It was excellent! I will definitely be using this as my go-to recipe for guacamole!

Oh my – so good and easy to make. Key #1 – make sure avocados are not over or under ripe. Key #2 (makes life so much easier) mash with a dough blender (aka pastry cutter). So much easier than a fork and can control consistency much better than food processor or electric blender. Readily available and inexpensive on line. Otherwise recipe is great as written, and you can play with ingredients to taste. Gets rave reviews every time.

I was never a guac fan until I made this recipe. I don’t care for cilantro so it is omitted but the guac turns out delicious. I have made it numerous times and has never disappointed me or those I share it with. allrecipes never disappoints.
