Ingredients

  1. 1 tablespoon olive oil
  2. 1 medium yellow onion, diced
  3. 2 tablespoons soy sauce
  4. 2 cloves garlic, minced
  5. 1 pound ground turkey
  6. 1 tablespoon soy sauce
  7. 1 tablespoon rice vinegar
  8. 1 tablespoon brown sugar
  9. 1 teaspoon sesame oil
  10. ¼ teaspoon red pepper flakes
  11. ¼ teaspoon ground ginger
  12. 1 head lettuce, separated into leaves

Instructions

  1. Heat olive oil in a pan over medium-high heat. Add onion and soy sauce; cook until tender, about 5 minutes. Stir in garlic; cook until fragrant, about 1 minute. Add turkey and cook, breaking into smaller pieces, until no longer pink, about 5 minutes.
  2. Make the sauce by whisking soy sauce, rice vinegar, brown sugar, sesame oil, red pepper flakes, and ginger together in a small bowl. Pour over turkey mixture and simmer until slightly reduced, 2 to 3 minutes.

I loved this, but added purple sliced cabbage and shredded carrots and at the end a drizzle of honey. I served it on a small bed of Jasmine rice and sprinkled cilantro on the rice. It was so good!

I added chopped cashews and chopped water chestnuts with a couple minutes left after the sauce was added. They add crunch to the mixture.

I didn’t have any peanuts but used cashews in stead. Recipe didn’t mention how much nuts to use but it turned out yummy. Very lite and satisfying. Will make this again.

The sauce is really good, however, I did add 1 tbsp. of Hoisin. Also, I prefer a crunch so added 1/4 cup of peanuts. Water chestnuts or carrots would work too. Next time I will chop in mushrooms and red peppers. Great flavours.
