Ingredients

  1. 1 pound ground chicken
  2. ½ cup chopped cilantro
  3. ¼ cup dry bread crumbs
  4. ¼ cup grated onion
  5. 2 cloves garlic, grated
  6. 1 teaspoon salt
  7. ½ teaspoon ground black pepper
  8. 2 tablespoons vegetable oil
  9. ¼ cup peanut butter
  10. 4 tablespoons sesame oil
  11. 3 tablespoons white sugar
  12. 2 tablespoons soy sauce
  13. 2 tablespoons chopped peanuts, or to taste
  14. toothpicks

Instructions

  1. Mix chicken, cilantro, bread crumbs, onion, garlic, salt, and pepper; roll tablespoonfuls of the mixture into balls.
  2. Heat oil in a skillet over medium heat. Add meatballs and cook until no longer pink in the center, 6 to 8 minutes.
  3. Mix peanut butter, sesame oil, sugar, and soy sauce together in a microwave-safe bowl. Microwave until sauce is heated through, about 1 minute.
  4. Toss meatballs with 1/2 of the sauce. Sprinkle with peanuts. Serve with toothpicks and remaining sauce for dipping.

I made this recipe for dinner exactly as written and we loved it. I will make a few adjustments next time to suit our tastes. I will omit the salt completely from the meatballs and I will add some crushed red pepper. The cilantro, garlic and onion were flavorful enough. And I will cut the sauce recipe in half and pour it all over the meatballs. We found the meatballs didn’t need a dipping sauce.
