Grey Cup Nachos

This is a customary beef dish served during festive seasons and sizable gatherings. Enjoy with rice and banchan (side dishes).

Ingredients

  1. 1 ½ pounds ground beef
  2. 1 onion, chopped
  3. 1 (1 ounce) package taco seasoning mix
  4. 1 green bell pepper, seeded and chopped
  5. 1 jalapeno pepper, seeded and chopped
  6. 1 (4 ounce) can sliced mushrooms, drained
  7. 1 cup process cheese sauce
  8. 2 (13.5 ounce) packages corn tortilla chips

Instructions

  1. Place the ground beef in a large skillet over medium-high heat. Cook, stirring to crumble, until no longer pink. Add onion and cook until tender. Drain off grease. Stir in the contents of the seasoning packet and any water if needed in order to prepare according to package directions.
  2. When the meat is done cooking, add the bell pepper, jalapeno pepper and sliced mushrooms to the skillet, and lower heat to medium. Cook and stir until vegetables are about halfway cooked, 3 to 4 minutes. Stir in the cheese sauce until everything is evenly coated.
  3. Serve tortilla chips topped with the meat and cheese sauce, or serve buffet style where each person can top their own nachos.

This recipe is tasteful and yummy. It went so quickly I’ll have to double it next time. The only change I made was using Turkey meat instead of red. It is a must try.

A coworker brought these in to work, and he had used freh mushrooms and grated Cheddar cheese. Really nice, fresh taste, seasoned just right.

Hmm… I sure had to make a lot of changes to this recipe. But, I think it’s a decent base. I eliminated the green pepper and mushrooms. I used pickled jalapeno pepper slices instead of a chopped fresh one. I added 2 cups of shredded cheddar and a 3.8 oz. can of sliced black olives. And, I served it with sides of salsa and sour cream. The cheesy beef mixture is really good and is what makes this recipe unique.

Delicious and easy to make! I added 1 can vegetarian refried beans and a can of sweet corn (drained) and allowed guest to serve themselves. We placed the meat in a bol,sprinkled cheese over it and stacked chips along our bowls for easy scooping.
