Greek Easter Eggs

Ingredients

  1. 5 cups water
  2. 12 yellow onions, skins removed and reserved
  3. 2 tablespoons white vinegar
  4. 12 eggs
  5. olive oil

Instructions

  1. Combine water, onion skins, and vinegar in a pot; bring to a boil. Set aside onions for another use. Reduce heat, cover pot, and simmer, stirring occasionally to make sure skins are submerged, for 30 minutes. Remove pot from heat, remove cover, and cool dye to room temperature, at least 30 minutes.
  2. Remove skins from dye and discard skins. Place eggs in the dye and bring to a boil; cook for 15 minutes. Remove pot from heat and leave eggs in the dye until a deep red color is reached, about 30 minutes more.
  3. Transfer eggs to a wire rack to dry, about 15 minutes.
  4. Rub olive oil onto each egg to make them shiny. Store eggs in the refrigerator.
  5. Before adding eggs to the dye, test them to ensure they all sink in water. If an egg floats, it may be too old and will not stay submerged for an even dye.

Good recipe. I made with yellow and red onion skins I had saved since October. I’m pleased with the deep color. I don’t exactly the amount of skins I used, since I save them in a gallon baggie until full. I did 30 eggs and used 6 tbs vinegar.

This is fantastic! Second year making them. I save onion skins all year, wrapping in a plastic bag in the freezer. Then after making them, place in Easter egg braids. Beautiful!!!

Great recipe. This is our 2nd year making eggs using this recipe. Our eggs have turned out absolutely beautiful! They had such an amazing color! We did cut back the time of cooking the eggs to 10 mins, and then let them finish in the water., because it stays hot for a while. Thanks for sharing.

I wondered how deep the color would be; it is a deep terra cotta color, very pretty. My eggs are a little overdone, but that’s not a surprise! I would try these again.
