Ingredients
- 2 pounds skinless, boneless chicken breast halves, cut into small cubes
- salt and ground black pepper to taste
- ¼ cup dry bread crumbs
- ¼ cup Parmesan cheese
- ¼ cup olive oil
- 2 teaspoons minced garlic
Instructions
- Preheat an oven to 425 degrees F (220 degrees C). Grease a baking pan.
- Season chicken with salt and pepper.
- Combine bread crumbs and Parmesan cheese in a bowl.
- Heat olive oil in a small saucepan over low heat, about 1 minute. Add garlic; stir and remove from heat. Coat chicken in the oil and dip into the bread crumb mixture. Transfer coated chicken to the prepared baking pan.
- Bake in the preheated oven until golden brown and crispy, 15 to 20 minutes.

Modified to be Gluten Free – Rice Panko Surprised that this didn’t have a lot of punch in the flavor department. Everything was good, the GF panko bread crumbs worked out perfectly as a substitute. Next round we will season the chicken a bit more when cooking.
Easy Peasy. Only addition is that I use an egg to dredge the chicken strips thru first so the cheese and Panko will adhere much better. Delicious
The recipe does not specify whether to use grated or shredded Parmesan (big texture difference). I intended to use grated but realized after it was too late that I was out. I did have shredded though and after using that, I am certain grated is what the recipe submitter is wanting you to use. The flavor was excellent but the coating didn’t stay on good. Good recipe!
