An instantaneous, hot sausage cheese dip. There is nothing elegant or low-fat about this dish; it is not tea party fare. This appetizer fills you up like a MEAL and keeps guests returning to the bowl. To make up for it, you might need to exercise twice, but you’ll be glad you did! Hot and with lots of tortilla chips is preferred.

Ingredients
- 1 pound pork breakfast sausage
- 2 (1.25 ounce) packages taco seasoning mix, divided
- 3 cups water, divided
- 2 pounds processed cheese food, cubed
- 1 tablespoon Louisiana-style hot sauce
Instructions
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain in a colander and discard grease. Transfer sausage to a large saucepan.
- Stir 1 package taco seasoning into sausage and cook over medium heat until fragrant, about 5 minutes. Add 2 cups water and remaining package taco seasoning. Stir until seasoning is dissolved; simmer for 5 minutes more. Reduce heat to low.
- Gradually add cheese food, stirring until cheese is evenly melted, 5 to 7 minutes. Mix hot sauce into melted cheese mixture. If the mixture becomes too thick, add remaining 1 cup water, as needed.
- Add as much or as little hot sauce as you like, but keep in mind: the longer you cook the dip, the more heat you will get from the cayenne pepper in the hot sauce.
- Be careful with continuing heat, as the cheese will burn if left on the heat without stirring. If you don’t have a small serving slow cooker, try keeping the dip in a large size slow cooker and serving up a bowl at a time next to the chips.
- This keeps great in the fridge for up to a week, if it lasts that long. To reheat, spoon the desired amount into a bowl, add a teaspoon or two of water, and microwave on medium for 1 to 2 minutes until hot.

This cheesy melted-man-dip is the best! I substituted the pound of pork breakfast sausage for a real man meat sausage, none of that breakfast fluff, and it just melts into the cheese. Aunty suggested bloods pudding for her tea, but I know she hasn’t been feeling well, and this melted-man-dip did just the trick to take away her peckishness. She likes her dip spicy, so I made sure to cook my sauce for a good 25 minutes. Sarah is still on her green platform though. she won’t eat anything but pork. I may try using this dip as a sauce in my pasties.
This stuff is amazing. It even warms up nicely the next day with just a little water!
