Ingredients

  1. cooking spray
  2. 1 tablespoon butter
  3. 1 cup chopped green onions
  4. 2 cloves garlic, chopped
  5. 1 ½ cups chopped cooked chicken
  6. 1 teaspoon salt
  7. ½ teaspoon nutmeg
  8. ½ teaspoon ground black pepper
  9. 12 empanada pastry discs
  10. 1 egg, lightly beaten

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C). Grease 2 baking sheets with cooking spray.
  2. Melt butter in a saucepan over medium heat. Add chopped green onions and cook until tender, about 4 minutes. Add garlic and cook for 1 minute. Mix in cooked chicken, salt, nutmeg, and black pepper; cook 1 minute more.
  3. Arrange pastry discs on a flat work surface. Dab a little water along the edges. Place a large tablespoonful of chicken mixture in the center; fold pastry over and press with a fork to seal.
  4. Transfer empanadas to the prepared baking sheets. Brush with beaten egg.
  5. Bake in the preheated oven until golden, about 20 minutes.

Quick & easy recipe. A bit bland. Would be a good base with the addition of cheese, avocado or salsa. The cooking time with the premade empanadas dough was good. Going to try other filling recipes.

These came out great! The discs I bought came in a package of 10 instead of 12, but I could fit the filling into 10 empanadas without a problem. As noted by another reviewer, the cooking time is a bit long. I took them out after only about 17 minutes.

Way to much salt! Cut the salt back to ½ teaspoon. Also, I agree with others. These were too crunchy for me. The empanada disc package said bake at 375° and I would leave off the egg wash.
