This quick and flavorful dip, which is similar to the street corn sold by cart sellers in Mexico, can be made in a matter of minutes. Excellent when paired with Fritos® or corn chips.

Ingredients

  1. 2 tablespoons Mexican crema (cream)
  2. 1 medium lime, juiced
  3. 1 tablespoon mayonnaise
  4. 1 teaspoon ground cayenne pepper
  5. ½ teaspoon salt
  6. ½ teaspoon ground cumin
  7. 1 (10 ounce) package corn kernels, thawed
  8. ½ cup crumbled cotija cheese
  9. 2 tablespoons chopped fresh cilantro
  10. 1 small serrano pepper, finely chopped

Instructions

  1. Stir Mexican crema, lime juice, mayonnaise, cayenne pepper, salt, and cumin together in a large bowl until well combined.
  2. Add corn, cotija cheese, cilantro, and serrano pepper. Mix until well combined.
