Ingredients
- 1 cup soy sauce
- 6 tablespoons brown sugar
- 1 tablespoon rock salt
- 2 teaspoons ground black pepper
- 4 pounds salmon fillets
Instructions
- Mix soy sauce, brown sugar, rock salt, and black pepper together in a saucepan; bring to a boil and cook until sugar and salt are dissolved, 2 to 3 minutes. Remove the saucepan from the heat and cool marinade.
- Cut salmon into strips, with or without the skin. Pour marinade into a shallow bowl and lay salmon strips into marinade. Refrigerate for 45 minutes.
- Preheat the oven to 185 degrees F (85 degrees C). Line a baking sheet with aluminum foil and place a wire rack on top.
- Lay salmon strips on the wire rack, discarding extra marinade.
- Place the sheet of salmon in the oven until dehydrated, about 8 hours.

As a fellow Dylan I heartily endorse this recipe. Our oven could only go to about 200 degrees and we didn’t have a wire rack, but it still came out absolutely delicious after 5 hours.
Turned out way better keeping on wire rack while in oven. Took way less time and actually thoroughly derided. Love this recipe
i did jazz it up with a tablespoon of Chile/Lime Salt and 2 tsp of crushed ginger…Added some real zing…Good Job !Dylan
This was good but it lacked something to me. It needs more heat to cut the fishiness of salmon but that is just my opinion. Good recipe but I would add some red chile flakes next time. Maybe even replace the rock salt with garlic salt? Good but I think with some tweaks it could be even better. Still a fun recipe and one I will make again!
