Dehydrated Beet Chips

To make crisp, delectable, and adaptable chips, beets are baked or dehydrated. Try experimenting with these chips’ flavors: smoked bacon salt? sesame-tamari? Whatever you want!

Ingredients

  1. 3 large beets, assorted colors
  2. ¼ cup water
  3. ¼ cup apple cider vinegar
  4. 1 tablespoon olive oil
  5. 1 tablespoon fleur de sel (sea salt flakes)

Instructions

  1. Peel and slice beets as thinly as possible with a sharp knife or mandoline.
  2. Combine sliced beets, water, apple cider vinegar, and olive oil in a large bowl. Let marinate, at least 10 minutes.
  3. Arrange beets in a single layer on food dehydrator trays. Sprinkle fleur de sel over beets. Store any beets that don’t fit in the refrigerator.
  4. Dehydrate according to manufacturer’s instructions, 8 to 12 hours.
  5. You can substitute sliced yams or turnips for beets. The texture will vary, but almost anything can become a chip if sliced thinly enough.
  6. If you don’t have a food dehydrator, arrange beets on lined baking sheets and bake in the oven on the lowest temperature setting for 3 hours 30 minutes.

I am waiting for the beet eater for final approval, but I am encouraged by what I see. I soaked the sliced beets in the vinegar/oil/water combo, but did so in a plastic bag to maximize fluid contact with the slices, and turned it frequently.

These turned out perfect! Perfect to eat on their own or add them to trail mix. I crunch them up and add them to my homemade trail mix of pumpkin seeds, sun flower seeds, dried lentils, dried chick peas, dried dates and dried mango. The salt and vinegar on the beets is a perfect added touch to the trail mix.

They’re pretty good! Only two beets fit in my dehydrator and I didn’t add salt, but they taste good. They’re crunchy like kettle chips. I might soften the beets a little before drying so they’re not so hard (braces). Great for dips though. 🙂

Great base recipe as stated. I have made them with cider vinegar but really love them with balsamic vinegar. I wait to salt them until they are done dehydrating. Just toss them with a tiny amount of salt.

I followed the recipe & enjoyed the result. It will be fun to try different flavours. The Kitchen Aid was great in slicing up the beets & the dehydrator finished them up nicely. I would definitely make them again!

Mine shrunk to the size of dimes?? Anyone have any input on this….. have a brand new stove and used the hydrator…… it’s a smart/healthy cooking option…..

Do not make the same mistake I did. If not using flake salt, do not add a tablespoon of sea or table salt. It is intensely salty and unfortunately is inedible.

These were excellent! I used the bacon salt on half of the batch and loved it. The texture is a little weird and off putting so I think that could use some improvement but other than that I have no complaints. When I make these again I will let the beets marinate in the vinegar overnight because I really liked that flavor that came out of them. Almost meaty if you will…
