You might not even miss the actual sandwich with this flavor-packed, creamy, keto-friendly hamburger soup with bacon! If desired, add tomatoes, bacon, cheese, and onions to the garnishes on each serving.

Ingredients

  1. 1 (8 ounce) package cream cheese, softened
  2. 1 (.7 ounce) package dry Italian-style salad dressing mix
  3. ½ cup mayonnaise
  4. 1 French baguette, cut into 1/2 inch thick circles
  5. 1 cucumber, sliced
  6. 2 teaspoons dried dill weed

Instructions

  1. In a medium bowl, mix together cream cheese, dressing mix and mayonnaise.
  2. Spread a thin layer of the cream cheese mixture on a slice of bread, and top with a slice of cucumber. Sprinkle with dill. Repeat with remaining ingredients.

We all love this recipe. Agree with others to make spread enough ahead of time for flavors to meld. I use Triscuit dill and sea salt crackers with this. So good!

I have made this recipe for years. It’s a recipe that everyone loves and I seldom take home leftovers. I do make these up about 4-5 hours ahead of time so that the flavors have a chance to blend. I did add the mayo but will leave out the next time. My original recipe calls for making these on cocktail rye bread & does not call for the mayo. I do like using the rye but have trouble finding in the South unless it’s Christmas time. If using a baguette, make sure you buy a good quality dense loaf.

I love cucumber sandwiches so I gave this a try. The recipe for the spread is sound but I do second following other users suggestions and swapping out mayo for sour cream. If you, like me, misread “Italian dressing packet” as “Italian seasoning” you can use 1tps italian seasoning, a sprinkle of salt, & a sprinkle of garlic powder as a substitution. My last suggestion is to not skimp on the spread because a thick, creamy layer is what pulls the whole dish together.

I’ve made this a number of times for various get togethers and it’s always a hit! I follow the recipe exactly with exception of toasting the baguette slices. I would feel if the bread weren’t toasted, it would have a soggy texture to it.

Very easy, relatively inexpensive & attractive. I made the recipe as written & used English cucumbers. I used a baguette, although it would be good on crackers as well. I liked the idea from the video of making “runnels” in the cuke to add interest. It makes s lot but I brought it to a party & there were none left!
