Cocoa-Coconut Granola Bars

Straight from your own oven, granola bars that are chewy, crispy, and choco-flavored! Why pay more for ones that taste bad and are bundled with questionable ingredients? These have coconut and chocolate, two of my favorite foods. You can easily substitute your preferred ingredients for those called for in this recipe.

Ingredients

  1. 2 cups rolled oats
  2. ½ cup flax seed meal
  3. ½ cup sliced almonds
  4. ½ cup unsweetened shredded coconut
  5. ¼ cup chia seeds (Optional)
  6. ½ cup honey
  7. ¼ cup firmly packed brown sugar
  8. 2 tablespoons coconut oil
  9. 1 teaspoon vanilla extract
  10. 1 teaspoon coconut extract
  11. 1 teaspoon ground cinnamon
  12. ½ teaspoon salt
  13. 5 tablespoons unsweetened cocoa powder

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch square baking dish.
  2. Spread rolled oats, flax seed meal, sliced almonds, shredded coconut, and chia seeds onto a baking sheet.
  3. Toast oats mixture in preheated oven, stirring every 5 minutes, until lightly toasted, about 15 minutes.
  4. Reduce oven heat to 300 degrees F (150 degrees C).
  5. Combine honey, brown sugar, coconut oil, vanilla extract, coconut extract, ground cinnamon, and salt together in a saucepan over medium-low heat; cook and stir until the sugar is completely dissolved, about 3 minutes. Stir cocoa powder into the honey mixture until dissolved.
  6. Mix toasted oat mixture and the honey mixture in a large bowl and stir until the dry ingredients are coated; spread into the prepared baking dish and press into an even layer.
  7. Bake in preheated oven until golden brown, 18 to 20 minutes.
  8. Cool bars in pan for 10 minutes, immediately cut into squares, and remove from pan.
  9. This recipe is very versatile. You can add dried fruits, chocolate chips, or other grains and spices.
  10. The sweeteners are interchangeable as well. My favorite combo is half raw agave nectar and half maple syrup, but you can even use maple syrup.

I really wanted something chocolate but wanted a healthier alternative, so I gave this recipe a try. This granola recipe was pretty good. I modified to my own taste by omitting the brown sugar and adding an extra cup of oats without increasing liquid portion of recipe to produce granola clusters (for cereal or yogurt) vs. granola bars. I also threw in a few handfuls of fresh cranberries and they added a nice tartness into the light sweetness of the rest of the granola. Thanks for a great recipe!

Great recipe. Very healthy granola bar. Everyone loved it. By accident, I let the honey mixture come to a boil, which results in a crunchy granola bar – which my husband quite liked. So depending on whether you want chewy or crunchy, you can modify as you like.
