For years, I’ve been preparing this cranberry rice dish. The cranberries provide a sweetness and sharpness to the dish that you wouldn’t anticipate in a savory one, making it different from usual rice pilaf recipes. And it’s really difficult to make a mistake.

Ingredients
- 2 cups all-purpose flour
- ⅔ cup soy protein powder (such as MLO®)
- ⅓ cup oat flour
- 1 cup white sugar
- 1 cup brown sugar
- ½ cup plain Greek yogurt
- ½ cup butter, softened
- 2 teaspoons vanilla extract
- 2 tablespoons milk, or more as needed
- 2 cups chocolate chips
Instructions
- Combine all-purpose flour, soy protein powder, and oat flour together in a bowl.
- Beat white sugar, brown sugar, yogurt, and butter together in a large bowl with an electric mixer until smooth and creamy. Add vanilla extract. Stir in flour mixture. Mix in milk, 1 tablespoon at a time, until batter is thick and smooth. Fold in chocolate chips.
- Roll batter into 1-inch balls with your hands. Arrange on a baking sheet. Transfer to the freezer and chill until firm, about 1 hour, or in the refrigerator, 2 to 3 hours.
- Substitute gluten-free flour for all-purpose flour for a gluten-free version.
- Any protein powder will work. I like MLO(R) because of the extra vitamins and minerals.
- There is a potential risk of foodborne illness from the consumption of raw flour.

These came out overly sweet. I had to use my hands to make the dough come together. I scooped them out with a small cookie scoop and then rerolled them. They were not my favorite and something I would not make again.
