Chickweed Hummus (“Chummus”)

When chickweed is added to regular hummus, spring is in the air and it tastes delicious too! The vibrant green hue and plenty of vitamins and minerals make it a springtime favorite. Enjoy.

Ingredients

  1. 1 (15 ounce) can canned chickpeas, rinsed and drained
  2. 1 cup lemon juice
  3. ½ cup tahini
  4. ¼ cup olive oil
  5. 4 cloves garlic
  6. ½ teaspoon ground cumin
  7. ¼ teaspoon ground black pepper
  8. salt to taste
  9. 1 1/2 cups chopped chickweed leaves and stems

Instructions

  1. Place chickpeas, lemon juice, tahini, oil, garlic, cumin, pepper, and salt in the bowl of a food processor and puree. Add chickweed and pulse until it is minced and well combined. Taste and adjust lemon juice, cumin, salt, and pepper as needed.
