Ingredients

  1. 1 cup rolled oats
  2. 1 cup steel-cut oats
  3. 1 cup crispy rice cereal
  4. ½ cup chopped mixed dried fruit
  5. ½ cup chopped almonds
  6. ¼ cup butter
  7. ½ cup brown sugar
  8. ¼ cup honey
  9. 2 teaspoons vanilla extract
  10. ½ cup mini chocolate chips

Instructions

  1. Grease a 9×13-inch baking dish.
  2. Mix rolled oats, steel-cut oats, rice cereal, dried fruit, and almonds together in a large bowl.
  3. Melt butter in a saucepan over medium heat; add brown sugar, honey, and vanilla. Whisk until sugar is completely dissolved, about 2 minutes. Pour over oat mixture; stir to combine.
  4. Spread oat mixture into the prepared baking dish. Press chocolate chips into the top. Refrigerate until chilled, about 1 hour.
  5. Sliced chilled granola mixture into 24 bars.

I didn’t refrigerate long enough to set BUT I ended up eating it with a spoon. Absolutely delicious and satisfied without too much sugar. Also more fruit and did without the chocolate.

These were really good! The only changes I made were that I used granola mix instead of nuts. For the next time I make these, I’m going to use more honey and less brown sugar. The bars are pretty sweet, but they don’t stick as much as I would like them to. My whole family likes them, and I don’t have to buy store bought ones again. Plus, if you use chocolate chips on top, I would suggest you not add any dried fruits to your bars. It makes the bars super sweet.

Very tasty however I have made these twice following the recipe exactly and both times I couldn’t get them to stick together to form bars. It ended up being granola.

I make this and use it as my cereal. I skip the cut oats if I dont have them on hand and I cant tell the difference. I use peanuts and raisins. I mix the chocolate chips in with the rest of the ingredients. I made a batch without nuts and it was good as well. You can play around with your ingredients to suit your taste. Way less expensive than the boxed stuff and more control over whats in it.

I am sure that this recipe is awesome but I wanted to make some changes for reasons of taste and because of health reasons for my son. I use this recipe as a Baseline only. I am one of those Cooks that add things until I like the taste. so as a baseline this recipe is great! I followed the oatmeal ratios but when it came to the dried fruit my son doesn’t like fruit so I ended up adding ground flaxseed, ground wheat bran, a half cup of shelled pumpkin seeds, half cup of sunflower seeds, half cup of homemade peanut (I roasted peanuts in canola oil with omega-3s and a dash of sea salt @350 for 13 mins then put in a processor with canola oil and honey because of soy allergy) half cup of good life mini chocolate chips(soy free, and gluten free for allergy), and Then followed rest of recipe brown sugar, butter, honey, and poured over dry ingredients then put into a 9x 13 and refrigerated for two hours and it turned out awesome!! I only change things due to child having food allergies and health issues. Great recipe as Baseline. Thank you for the great recipe!?

So easy to make! The stone ground oats gives it great texture so try to purchase it. We did not use the chocolate chips but added coconut. So many options to add or delete items. I will continue to make this recipe over and over.

Will make often! So versatile. Can swap out any dried fruit (apricots, raisins, cranberries); and add chia seeds, sunflower seeds; and can use sunbutter instead of peanut butter so it is nut-free for school.

I have made these several times and love them. My family and a friend like them as well. I decided to try something different and used apple sauce in place of butter and didn’t have any honey so I used lite corn syrup. They still turned out really good. I always use Peanuts instead of walnuts.

To make the “school safe” I use pumpkin or sunflower seeds. I also substitute the rice crispies for 1/2 c coconut and 1/4 sunny boy (or other similar cereal, or bran etc) and 1/4 oats. it’s super flexible that way. And I increase the amount of dried fruit adding several kinds chopped to appropriate sizes. If you put the chocolate chips into the bottom of your parchment lined pan then you can really press the mixture in well without messing them up by getting melted by the heat of the mixture. Please note: for those who complain about the mixture not sticking together it’s because you need to cook the syrup for longer, a good boil for 3-5 min. and I add a generous 1/8 tsp of soda right before pouring it onto the oat mixture. it greatly helps bring it all together and keep it firm.

omg! I can’t stop eating these. I didn’t have steel cut oats so I just put regular oats in place of the steel cut. I like nuts so I added more nuts and left out the fruit. This is such a great recipe that you can substitute however you want. Thank you!

I made this exactly as the recipe states and I didn’t care for the flavor. The bars also didn’t stick together nicely. For me, this recipe needs a lot of tweaking.

Excellent recipe! Been searching for a good chewy granola bar recipe and found it. I wanted to make this as healthy as I could with what ingredients I had on hand. I used rolled oats entirely (was out of cut steel ones) raw local honey, grassfed butter (will experiment with ghee next batch) and rapadura mixed with a little blackstrap molasses in place of brown sugar. Crushed almonds, pecans and raisins were added (no other dried fruits on hand) and I didn’t have crispy rice cereal either lol so I left it out and this recipe was still so so good and tasty. As an extra experiment I reserved a little of the mixture in a small bowl and poured in a little sprouted almond milk over it and gave it a taste…oh yes, great as a cold cereal too. Thank you for sharing this.

I love it!! Per reviews, I added just a little but more honey so they will stick better and it was perfect! Instead of almonds, I used pecans. Way better than store bought granola bars!
