Ingredients
- 4 eggs
- 1 pound shredded Cheddar cheese
- 1 teaspoon minced onion
- 2 jalapeno peppers, seeded and chopped
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- Place the eggs into a food processor, and process until light and frothy. Add Cheddar cheese, onion, and jalapeno peppers, and process until smooth. Pour into an ungreased 8×8 inch baking pan.
- Bake in the preheated oven until set, 25 to 30 minutes. Cool for 5 minutes; cut into squares to serve.

Didn’t use food processor; just stirred 16 oz shredded cheddar with other ingredients, PLUS, ADDED ~1/3 CUP FLOUR. Unusual appetizer, looks good, was popular. Tastes best warm.
This is very tasty; easy to make and bake, and IF there are leftovers, nice for breakfast. Ben making this for years.
I added sliced olives. Everyone at our Potluck Players gathering (we read plays once a month) gobbled up the squares!
I made this with chopped green chiles and was very good!
These were good, but once the cool, not as good…..and not so good reheated! But they are good right out of the oven!
