Cayenne Sugar Nuts

Everything wonderful, including sugar and spice. These are a nice twist on a holiday classic.

Yield: 1 pound nuts

Ingredients

  1. ⅔ cup white sugar
  2. ⅓ cup brown sugar
  3. 2 teaspoons salt
  4. 1 teaspoon ground cinnamon
  5. ½ teaspoon cayenne pepper
  6. 1 egg white, room temperature
  7. 1 tablespoon water
  8. 1 pound whole pecans

Instructions

  1. Preheat oven to 325 degrees F (165 degrees C). Line a baking sheet with parchment paper.
  2. Mix white sugar, brown sugar, salt, cinnamon, and cayenne pepper together in a bowl.
  3. Beat egg white and water together in a separate large bowl until frothy but not yet stiff; add pecans and stir to coat. Season nuts with the sugar mixture and spread onto the prepared baking sheet in a single layer.
  4. Roast in oven, turning occasionally, until the nuts are browned and no longer moist, about 30 minutes.
  5. Set baking sheet on a wire rack to cool nuts, breaking apart any nuts stuck together.
  6. You can use pecan halves, if you prefer.
  7. These nuts can be stored in a plastic bag in your freezer.

I made half a recipe and used pecan halves. I kept looking at them to see if they were done, using the direction of the submitter about baking them until they are not moist. It was hard to tell because of the color of the coating, and I did overcook them in the 25 minutes they were in the oven. These were pretty good, but I thought maybe there was too much sugar for the amount of pecans that I had weighed for accuracy.
