Cayenne Cashews

They are absolutely delicious! I enjoy these even though I dislike spicy cuisine. I started making these weekly when my mother handed me the recipe!

Ingredients

  1. 1 egg white
  2. 3 cups unsalted raw cashews
  3. ⅓ cup white sugar
  4. 2 teaspoons ground cumin
  5. 2 teaspoons salt
  6. 1 ½ teaspoons cayenne pepper

Instructions

  1. Whisk egg white in a medium bowl until frothy. Mix in cashews until coated. Let soak for 30 minutes.
  2. Preheat oven to 250 degrees F (120 degrees C). Line a baking sheet with aluminum foil.
  3. Combine sugar, cumin, salt, and cayenne pepper in a small bowl. Pour over cashews and toss to coat. Spread cashews on the prepared baking sheet.
  4. Bake in the preheated oven, stirring halfway through, until fragrant, about 40 minutes. Reduce oven temperature to 200 degrees F (93 degrees C). Continue baking, stirring every 20 minutes, until cashews look dry, 30 to 40 minutes.
  5. Transfer cashews to a container and let cool, shaking or stirring occasionally to prevent them from sticking together.
  6. We store our cayenne cashews in plastic containers so that we can shake them while they are cooling. Make sure they cool with the lid off.

I followed an earlier suggestion and used parchment paper instead of foil. Also used 4 cups of nuts. My family loved these.

Use parchment paper, it won’t stick like it does to tin foil. Also you can use 4 cups of cashews. Really good.

Loved them!! I followed the recipe and WOW! They were a big hit with my entire family. Spicy and sweet. Letting them sit in the egg whites really make a difference. I had to let mine cool down on my foil lined baking sheet since they were stuck together a bit (as expected). Once cool, I couldn’t get enough of them, and the cumin hit the spot!

Delicious recipe. I found them a little sweet, so might cut a bit of the sugar next time, but the cayenne provided just the right heat. Really good, and super easy. I accidentally left my oven at 250 until the last 15 minutes, but to no ill effect. Thanks.
