It takes little time to make these cherry cheesecake brownies. Feel free to substitute a boxed mix or your preferred brownie recipe for the brownie component. Trader Joe’s and other retailers frequently carry morello cherries. Savory Spice Shop® sells black cocoa onyx powder, which is entirely opportunistic but gives the brownies an opulent dark chocolate hue.

Ingredients

  1. 1 pound catfish fillets
  2. 2 ½ cups coarsely crushed buttery round crackers
  3. 1 medium onion, chopped
  4. 1 large egg
  5. 1 tablespoon creamy salad dressing (e.g. Miracle Whip)
  6. 1 teaspoon prepared yellow mustard
  7. ½ teaspoon Old Bay Seasoning TM, or to taste
  8. ¼ cup vegetable oil for frying, or as needed

Instructions

  1. Place catfish in a saucepan with enough water to cover; bring to a boil. Cook until fish flakes easily with a fork. Remove from heat and drain water.
  2. Mash fish in the saucepan. Stir in crackers, onion, egg, salad dressing, mustard, and Old Bay until evenly blended. Form into 8 patties.
  3. Heat oil in a large, heavy skillet over medium-high heat. Fry patties in hot oil until golden brown on both sides. An instant-read thermometer inserted into the center of a patty should read at least 145 degrees F (63 degrees C). Drain on a paper towel-lined plate and serve hot.

I followed the recipe with a couple of changes. Didn’t have catfish but had some frozen crappie that needed to be used. I think any flaky fish would work. Tried to keep the fish in chunks not mush. Baked it with s&p. Used 2 tspn of Old Bay. Used two eggs. The wife loved it. Got this one saved.

It was a good alternative to fried catfish, don’t over process you fish (don’t mash it to smithereens). I just used store brand snack crackers, and frozen Swai (it’s less expensive where I live). Don’t boil your fish instead poach it in water or court bouillon. Serve with tartar sauce and malt vinegar. This dish can be made in little time.

I used only 2 cups of crackers and three quarters of an onion. I would like to add a bit more old bay and sauté the onions next time.

Love this recipe! I’ve made this 5 times now and am currently making it again. I agree with baking it with your own spices rather than boiling it. Boiled the fish the first time and have baked every time since. It’s way better and more flavorful baking it. Other than changing/adding my own spices, I follow the ingredients. I dredged it in flour once based on one review, was not happy with the result and don’t do that anymore. This is a keeper! I make it every couple months or so when I find catfish on sale.

I made this recipe, but I tweaked it. I used 2 swai fillets, baked in the oven 20 minutes seasoned with Old Bay seasoning, also I didn’t have mayo so I used about 1/4 c. ranch dressing, I sauteed onion, garlic, parsley, and seasoning in butter, added about 2 T flour and a little water, simmered to make a paste to bind ingredients instead of mayo. The cakes came out really good, just next time I plan to add more seasoning, and I might try bread crumbs instead of Ritz crackers

I will make it again! I used Trader Joe’s 21 Seasoning Salute (what I had on hand) and Ritz Crackers (what I had on hand) but look forward to trying the taste difference with buttery crackers. I am unfamiliar with cooking catfish but it was 50% off…I am a risk taker and a frugal shopper. This is an easy recipe and has given me the confidence to make it again, even to substitute canned tuna.

I made these cakes were absolutely delicious almost as great a Maryland crab cakes. The only thing I did differently I change in the recipe was I used Ritz Crackers which I believe made the absolute difference in taste. I made this one evening in place of Crab cakes and fooled everyone at the dinner table, my wife wondered when I bought crabmeat. Everybody was shocked that catfish was used in the recipe instead of crabmeat.

I followed what was printed and all turned out well. My guests and I really enjoyed the flavor, however, I suggest the following modifications: Comments from first usage: 1. Add salt, it really needs some. 2. Double or triple the amount of “Old Bay” seasoning. 3. Low and slow frying until you get the right color. 4. Pull together early and let it sit in the fridge to allow the cakes to firm up.

used freshly caught catfish. the only thing I didn’t have was Old bay so I used cayenne and seasoned salt. My grandkids even liked it!

We tweeked the recipe because this was our 3rd try at cat cakes. I am from Maryland, so we were excited to try this. First we sauteed 1/2 onion and bell pepper in olive oil, let it cool and set it aside. We used 2 eggs instead of 1, 3 tbl of regular mayo, 1/8 cup of old bay, 1/2 sleeve of crushed butter club type of cracker. Mixed it all together and it was wonderful. When making something like this you have to eyeball the fish meat, mix ratio. We fried it in peanut oil. The cakes were wet before fried, but as I recall my mothers crab cakes are wet when she fries them too. They were just right!!!

I seared the catfish after sprinkling with Tony Chatteries, and only used 1 1/2 cup of crackers. Pretty good, very similar to salmon patties

I doubled the recipe and had a problem getting them to stay in a patty. Added an extra egg, and that helped. I will try again

Yum! The only change I made was to use bacon flavored “buttery round” crackers, and it was great. The mixture was a little wet to work with though. I think next time a few more crackers.

Loved these!!! Only change I made from reading other reviews was after I made the patties I added breadcrumbs to the outside of the patties for the extra crunch. So good.

Made this with left over swai fillets and it was lovely. Added a bit of chili flakes and used Dijon mustard for our preference. Really good, simple recipe. Definitely one to make again.
