Carrot Cake Freezer Energy Balls

Honey and peanut butter are used to sweeten these energy bites from the freezer.

Ingredients

  1. 1 cup finely shredded carrots
  2. ½ cup quick-cooking steel-cut oats
  3. ¼ cup flax seed meal
  4. ¼ cup peanut butter
  5. 3 tablespoons honey
  6. 2 tablespoons chopped walnuts
  7. 2 tablespoons chopped raisins
  8. 1 teaspoon vanilla extract
  9. ½ teaspoon ground cinnamon
  10. ½ teaspoon ground ginger
  11. ⅛ teaspoon salt

Instructions

  1. Line a baking sheet with parchment paper and set aside.
  2. Combine carrots, oats, flax meal, peanut butter, honey, walnuts, raisins, vanilla, cinnamon, ginger, and salt in a bowl. Beat with a hand mixer until well combined.
  3. Roll mixture into 12 equal-sized balls and place on the baking sheet. Freeze until they hold their shape, at least 1 hour. Transfer to a freezer-safe container and store in the freezer.
  4. I used quick steel-cut oats for the nuttiness and crunchiness, but regular quick-cooking oats can be used.
