Caprese on a Stick

This is a fantastic and simple finger food. I invented it because, although I enjoy caprese, it was challenging to serve at large gatherings. The same components worked well when placed on a toothpick.

Ingredients

  1. 1 pint cherry tomatoes, halved
  2. 1 (.6 ounce) package fresh basil leaves
  3. 1 (16 ounce) package small fresh mozzarella balls
  4. toothpicks
  5. 3 tablespoons olive oil
  6. salt and pepper to taste

Instructions

  1. Thread a tomato half, a small piece of basil leaf, and a mozzarella ball onto toothpicks until all ingredients are used. Drizzle the olive oil over the tomato, cheese and basil, leaving the end of the toothpick clean. Sprinkle with salt and pepper. Serve immediately.

The ingredients should be corrected. Cherry tomatoes ‘halved’ would be very messy and the video shows them whole. I’d be upset if I didn’t know any better and had started by halving my tomatoes!

An easy and popular appetizer to share. I used the mozzarella pearls that come marinated in olive oil and herbs, and by the time I had finished assembling the skewers there was herb olive oil on the tomatoes and basil. I will make this again and again.

I made this and everyone loved it. The only change I made was to create a dressing with 1/3 balsamic vinegar, and 2/3 olive oil. I added salt and garlic powder to my “dressing.” Then I brushed this over the caprese sticks. People went mad for this.

The only changes I made were to add two pieces of mozzarella instead of one, and rolled them into some good olive oil before placing onto a serving plate. Especially liked that it was easy, clean, even though a bit time consuming. A good one for children to make and proudly serve.

My 3-stars is for as it is written, which to me leaves out an important ingredient: reduced balsamic vinegar. I made these (half a mozzarella ball, and I used seasoned and marinated mozzarella rather than plain)), half a grape/cherry tomato, and one large basil leaf per toothpick. Then I drizzled in high quality olive oil, and reduced balsamic vinegar. Then salt and pepper. To make the balsamic reduction, just boil it for a short time till it’s about half the quantity. It becomes thicker and more syrup like. Cool, then use for drizzling.

Made this for our monthly ladies get-together. Used marinated mozzarella balls from Trader Joe’s (thanks to a previous reviewer) and added prosciutto (thanks to another previous reviewer). Spooned on some marinade from the mozzarella balls. Next time I will add a little balsamic vinegar or vinaigrette as well – for more flavor. Threaded on toothpick as per recipe, but next time, will add another tomato and possibly another cheese as well. Very nice appetizer – thanks for posting.

Easy and so good. We grow our own cherry tomatoes and basil. I do add a drizzle of balsamic and a little coarse salt and freshly ground black pepper. This is always a hit on warm summer days!
