Broccoli Bites

Delicious broccoli florets are fried and covered in a cheese sauce. We were saddened when our neighborhood restaurant quit providing its broccoli bites. So one night I tried to recreate them at home. It was amusing to observe that shortly after, they began bringing them back here.

Ingredients

  1. 3 tablespoons prepared Dijon-style mustard
  2. 4 tablespoons honey
  3. 2 cups broccoli florets
  4. 1 cup shredded Cheddar cheese
  5. 1 egg
  6. 1 cup milk
  7. ½ cup sifted all-purpose flour
  8. ½ teaspoon baking powder
  9. ½ teaspoon salt
  10. ½ teaspoon vegetable oil
  11. ½ cup vegetable oil for frying

Instructions

  1. To make the sauce: In a small bowl, stir together the mustard and honey. Set aside.
  2. Chop florets into small pieces or pulse lightly in food processor. Toss in a mixing bowl with shredded cheese. Set aside.
  3. Beat egg and stir in the milk. Sift flour, baking powder, and salt together and combine them with the egg and milk mixture, beating well. Beat in 1/2 teaspoon oil as well. Pour mixture over broccoli and cheese and toss to coat well.
  4. In a large skillet or saucepan heat oil to 375 degrees F (190 degrees C).
  5. Drop broccoli mixture by spoonfuls into 375 degrees F (190 degrees C) oil and fry until golden brown. Serve with honey mustard sauce.

Air fryer did the trick in ~8 min. This is pretty easy & everyone ate their broccoli. Upped the flour to one cup, used more broccoli just because I had it. Kept the cheese at 1 cup. Skipped the oil in the batter. My batter was the consistency of slightly runny strawberry shortcake biscuit batter. It looked a little thin, but was right after air fried. I gave the tops a light spray of canola oil air fried @ 375 for ~ 8 min. Puffed crisp globs of broccoli & cheese, yummy

I made it with half the milk and no oil. I also baked them for 20 mins at 375. They were good, a quick snack.

Turned out great! I made a low carb version using half coconut flour and half almond flour. I also didn’t have milk so I used half and half. I also left broccoli a little more chunky. I will make again!

After reading recipe and reviews decided to make waffles. Added onion, garlic and sriracha for a little more flavor. After first waffles added about 2 tablespoons flour a teaspoon of baking powder and a little more olive oil so they were puffier and easier to remove from waffle iron. Recipe would have been fine as is. Will make again

I followed the directions exactly, but my mixture was way too soupy. Didn’t know what else to do so I added bread crumbs to give it the consistency to stay together. Once fried, they were delicious.

I wish I had read the comments before I made these. Mine were also runny and did not hold together well. When dropped into the oil. I also had to add more oil for frying. The taste is good

Great! Based on other comments, I doubled the flour, baking powder & salt. Also added garlic powder. Family loved them! Husband suggested using zucchini or ham next time. Quick & easy!

Maybe if the measurements were corrected, it would be ok. 1/2 C. oil for frying? Are they supposed to be deep fried? Or just browned in a frypan? Mine were very loose, messy, not worth the effort.

My kids adore broccoli and they really didn’t care for this. Think I will stick to steaming it w/some butter. Batter didn’t really stick and really oily.

I took the advice of some other reviewers and added less milk and extra flour so that I could ball them. After balling, I rolled some of them in bread crumbs to see if they would be crispier or whatever; both with and without bread crumbs are good. I also mixed cauliflour with the broccoli too. The mixture definitely needs spices added to it or you get rather bland tasting balls. I added some salt, pepper, garlic powder, onion powder. A little ground mustard was yummy too. I also used Pepper Jack cheese to give them a little kick.

I had high hopes for this but the batter did not stick to the broccoli and it ended up mushy and greasy. Since it is not a healthy type dish I think it would be better to go all out and deep fry.
