Bisquick Sausage Balls

This is one of my sister-in-law’s favorite dim sum dishes, and she is Chinese. It requires some work but is well worth it; its Chinese name is Char Siu Bao. Pork that has been barbecued is frequently found in the deli area of supermarkets or Asian markets.

Ingredients

  1. 6 cups baking mix (such as Bisquick ®)
  2. 2 pounds shredded extra-sharp Cheddar cheese
  3. 1 pound sage-flavored pork sausage (such as Neese’s® Extra Sage Sausage), at room temperature
  4. 1 pound hot pork sausage (such as Neese’s® Hot Sausage), at room temperature

Instructions

  1. Gather all ingredients.

  3. Preheat the oven to 300 degrees F (150 degrees C). Grease baking sheets.
  4. Mix baking mix, Cheddar cheese, sage-flavored pork sausage, and hot pork sausage together in a large bowl.

  7. Form sausage mixture into 1 1/2-inch balls; arrange on the prepared baking sheets.

  9. Bake in the preheated oven until no longer pink in the center and browned on the outside, 25 to 30 minutes.

I cut the quantity in half, used 1 lb store brand fresh ground sausage, no sugar. 2 cups homemade bisquick, no sugar. Added 2 stalks chopped celery, black pepper, cayenne pepper, red pepper flakes, diced jalapeños, parmesan cheese, oregano, thyme, basil & sea salt. 400° 20 minutes.

These sausage balls are a family favorite. My mother made them for years. She taught my son to make them when he was little. He is now 19 & took over making them since my mom passed away. We have them on Christmas morning. And keep some unbaked in the freezer to bake up for an anytime snack.

Not a fan. Mix is far too dry, added a cup of milk. Oven temp of 300° is too low. Baked for 40 minutes. There is no problem as far the temp on my oven. On the remainder I increased the temp to 350° and turned on the convection oven feature baking for an additional 10 minutes. My family did enjoy them. I think next time I will use the recipe from Bisquick.

Overall a very good recipe. I agree with less Bisquick and more sausage like many of the other reviewers. All according to taste. To keep from that dryness, I insert a nugget of Velveeta cheese in the center of each ball. That gooey nugget will not allow the sausage ball to be dry and who doesn’t need more cheese!

Giving these 5 stars because it performs even when ingredients are changed: we’re gluten free. Changed to Aldi’s gluten free biscuit mix. Used Aldi sausage (regular and hot). Another review suggested 4c mix. Gluten free stuff tends to be dry. So I started with 4c and added maybe another 3/4c after all was thoroughly mixed. I froze the balls then I baked on parchment paper. I think the timing is important when doing gluten free: baked first sheet 25-30 min and while good, were a bit dry. Second sheet baked 20-25 min and were better. Next time I’ll try adding 2T milk. But any recipe that can perform this well even with ingredients altered is great! Made about 70 1” balls and almost all were eaten at party.

I’ve been making sausage balls for many, many years. Usually during Christmas season. My family loves them. This recipe says 6 cups Bisquick. Way too much. 4 cups is plenty. Also I add about 2 tablespoons Worcestershire sauce. Gives them that little extra umph! As far as the sausage brand, I prefer the homemade hot sausage from Bigs Meats and More, in McBee SC. Jimmy Deans is good too. Good quality sausage is a must. Delicious.

I have zero idea why anyone had issues with this recipe…. we don’t have neeses brand sausage so I used 1 lb Jimmy deans reg and 1 lb hot, and sharp cheddar, I did add 2 TBSP milk, and raised the temp to 350 because of my oven, and they were perfect. I have tried other recipes, and this one is the best, IMO. We keep them handy almost all winter for a quick grap at any time. They heat up nicely in the microwave in seconds.

My mix was looking a little dry so I added a 1/2 cup milk to make it less dry. They turned out fluffy and delicious! I will add more sausage next time.

I used to make these with a different recipe quite often. I used this All Recipes recipe this time and I kept rechecking the amount of Bisquick because it seemed like way more than I remembered. I made them anyway, (a double batch!)and they were dry dry dry and horrible. Ruined dinner and wasted a couple pounds of sausage, all that cheddar cheese, and almost three small boxes of Bisquick. Done with this site. Thanks for nothing.

I made this recipe using mild sausage and sage sausage and also 1/2 of the cheese was extra sharp yellow cheddar and extra sharp white cheddar. The sausage balls came out wonderfully. I made them mostly for munchies for me & my husband and he took some to work and shared with co-workers. Reviews from them were thumbs up. They really liked them. And so did I. I’m not waiting to make them for holidays only. I will be making these year-round.

I like/love these year-round as a breakfast staple/meal, for a snack or a full breakfast meal. I did however make changes to the flavors of the sausages. I cannot handle hot sausage due to GI issues. Plus, sometimes I just want/use regular sausage instead of the sage &/or hot flavored sausages. It cannot get any better than this!!

I decided to cut the recipe in half to not have so much. Well the sausage balls came out very dry and were horrible. Could not eat them. Way to doughy. I then looked at the Classic Bisquick sausage ball recipe and it has less mix and a 1/4 cup of milk which would make them much more moist. I will use that recipe from now on. This is a terrible recipe.
