Baked Shrimp Wontons

Although it is simple to cook alone, my husband and I work together to prepare this bacon-wrapped fish. Delicious, simple, and disappears as soon as it is put on the table. What more could you possibly want?

Ingredients

  1. cooking spray
  2. 12 wonton wrappers
  3. 1 cup peeled and deveined shrimp
  4. ½ cup diced water chestnuts
  5. ⅓ cup mayonnaise
  6. ¼ cup chopped green onion, divided
  7. 2 teaspoons sesame oil
  8. ½ teaspoon finely chopped fresh ginger
  9. salt to taste

Instructions

  1. Preheat oven to 300 degrees F (150 degrees C). Spray a muffin tin with cooking spray; line cups with 1 wonton wrapper each.
  2. Combine shrimp, water chestnuts, mayonnaise, 2 tablespoons green onions, sesame oil, ginger, and salt in a bowl. Spoon mixture into the wonton wrappers.
  3. Bake in the preheated oven until edges are dark brown, about 18 minutes. Remove wontons from muffin tin; garnish with the remaining green onions.

Replace the mayo with cream cheese and adding a little garlic would make this a five star recipe. I loved the crunch of the water chestnuts and the hint of ginger. I made this for the Canadian Allstar Hosting Challenge.
