Other than being super thick, this was fantastic. It was easy to put together once the prep from cooking and crumbling the bacon, shredding the cheese, and snipping the chives was done. The next time, I’d use a mixer to blend the cream cheese and sour cream with the ranch seasoning as the cream cheese tended to want to have tiny lumps that were a pain to whisk out. I took this to a potluck at work and it was a hit. I received many compliments on this “dip”. I call it “dip” in quotations because it isn’t dippable and is dense, so you really need a spoon to get a portion. I paired this with some thick cut french fry curls and it was just like eating a loaded baked potato with all the toppings, but much more fun. I could see this “dip” as being great with raw crunchy veggies, a spread for a tortilla and rolled up, on a cracker, or as a topping on a baked potato. I am adding this to my list of go-to party foods because this is a winner!
Very tasty recipe! I left off the cream cheese and only used 1/2 packet of ranch dressing mix.
I made this and it’s very good. It made too kuch for just me.
I was looking for a quick an easy recipe using sour cream as a main component of the dip. Omitted the bacon and ranch, added powdered onion & garlic.
I liked this overall but it needed some adjustment. It was just too thick to be a good chip dip. It had good flavor but I agree that it was very salty. I think if you cut back on the cream cheese and on the ranch dip, this would be much better. As it was, it was used to top baked potatoes rather than as a chip dip because it was too thick to dip easily. As a baked potato topping, it was great.
I love this dip! The only change I made was omitting the green onion. It may be slightly on the salty side but the flavors are all there and it tastes awesome! We eat this with Fritos scoops and potato skin chips if we can find them. Definitely a go to dip to make:)
This become our extended family’s go to dip for a few years now for gatherings. I double the sour cream, that is the only change I make.
Huge hit! I used 3-4 green onions, added tomatoes and an additional 4-6oz of sour cream to taste.
This is an amazing dip. I highly recommend this for any party. I make it on Christmas Eve for my family , and they rave about it. I would not substitute anything in this recipe . Thankyou for this wonderful dip , and I will continue to make it in the future!!!!
This easy recipe was a HIT!!! It was YUMMY made exactly as it is written (I used lower fat cream cheese and sour cream) and tastes just like the delicious toppings that go on a loaded baked potato! Served it with crinkled low salt potato chips and that was perfect to feel like you are eating a loaded baked potato! The large bowl it made quickly disappeared and the crowd loved it! This is keeper.
We made this tonight in an attempt to find a low carb dip for our veggies. We used real bacon, colby jack cheese and sugar free ranch dressing. We loved it.
After reading some of the other reviews I made some changes. I doubled the recipe and added an extra brick of cream cheese and real bacon. I also added some fresh minced garlic and seasoned salt. I wasn’t able to make it the night ahead, but did let it set in fridge about 30 min before serving. My guests loved it! Served it with baked potatoes, grilled steaks and grilled mushrooms/onions. It’s great as a topping on the steak too; that’s how I was eating leftovers!! Will definitely make again.
I made this exactly as written initially, it was too thick as a dip for a fragile potato chip so I added a bit more sour cream to make it more spreadable. I let it sit for over a day before serving it thinking it would give it great flavor.. It was just okay, maybe if you were to fry up real bacon it would taste a little better. I almost wonder if it would be better hot because of the cheeses in it. If I were to make it again I would probably add some fresh garlic and real bacon then I would try baking it in the oven for a half hour and see if that helps the consistency and flavor.
huge success!
Very tasty! I added a little more sour cream to dipafter letting this sit as all the chips kept breaking from it’s thickness, after that it was golden. I made a half batch and it came out delicious.
This was a winner all around. The only change I made was to use 16 oz. sour cream instead of 8. I think it was perfect for dipping. It might have been a little thick with only 8 oz. Will definitely make this one again!
Loved this quick and easy recipe. Added black olives and just crumbled some bacon up as I didn’t see a need to make a special trip to the store to buy bacon bits. Will make over and over again. Thank you for the recipe :-).
I have been making a variation of this for years & it is always a crowd favorite. I omit the green onion (personal preference, and 1 less thing to have to do for party prep), but the dip is fabulous either way. This MUST sit a while for the flavors to blend prior to serving…This is also a fantastic baked potato filling 🙂 Thanks so much for putting this out here!!
Dynamite and fantastic! Huge hit!
Very well received.
I didn’t have ranch seasoning so I did half the amount of sour cream plus ranch dressing. Threw it all in a crock pot and served warm right away. Very good with tortilla chips.
