Baked Banana Fritters

Simple banana fritters with a lovely, sweet crunch are baked rather than fried.

Ingredients

  1. β…“ cup dry bread crumbs
  2. 2 tablespoons dry shredded coconut
  3. 1 teaspoon white sugar
  4. ΒΌ teaspoon ground cinnamon
  5. 1 egg white
  6. 2 bananas, cut into bite-size pieces

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  2. Combine bread crumbs, coconut, sugar, and cinnamon together in a bowl. Beat egg white in a small bowl until frothy. Dip each banana piece in egg white and press into bread crumb mixture. Place the breaded bananas on prepared baking sheet; do not stack.
  3. Bake in preheated oven until golden brown, about 10 minutes.

Kids liked it deepfried, not so much baked. They also weren’t noticibly cooked after 10 min or even 15.

very easy and delicious. Everyone loved it. Made with crushed up chex, coconut, no sugar, more sugar. Would put in processor next time so is more fine so would stick better.

I didn’t have bread crumbs so I put some wheat Chex in a baggie and crushed them to substitute. I used 3 tablespoons of coconut and omitted the sugar since my coconut was sweetened. Turned out yummy!
