Everyone will love this quick and simple snack of French bread cooked until bubbling and topped with a creamy artichoke spread.

Ingredients

  1. 1 (14 ounce) can artichoke hearts, drained and chopped
  2. 1 cup freshly grated Parmesan cheese
  3. 1 cup mayonnaise (such as Hellman’s®)
  4. 1 clove garlic, finely chopped
  5. 1 loaf French bread, cut lengthwise in half

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Combine artichoke hearts, Parmesan cheese, mayonnaise, and garlic together in a bowl.
  3. Spread artichoke topping evenly over the French bread halves. Place coated bread on a baking sheet.
  4. Bake in preheated oven until topping is hot and bubbling, about 20 minutes.

This recipe is so easy and so yummy. My garlic cloves were small, so I used about 8 and I mashed them. I also grated an entire 8 oz block of parmesan into the mixture. With the rest of the ingredients as listed in the recipe, I had enough spread to cover two 12-inch “bake and serve” french loaves (I baked the rolls whole for 5 minutes less than package instructions, sliced them in half lengthwise, then spread the artichoke mixture and baked again according to recipe instructions). These were a big hit! I can see trying new additions to the spread – crab, capers, etc.

This is a super recipe. Every time I make it is never enough. It is always one of the first appetizer gone, and it is just wonderful. I was surprised when someone said there was no zing. The Parmesan should provide that zing. It is best served warm. That is not a problem since is disappears so fast. I have made it many times, and I have tried adding chicken, shrimp and many other things and it is still wonderful. My favorite is the original recipe. Yummy!

This is like the sandwich at Penn Station, only they use provolone rather than Parmesan. I make this out of frozen artichokes to put on my turkey sandwich. Going to try it with Parmesan.
