Energy bars with almond flour, peanut butter, and honey. Keep for up to one month in the freezer or five days in the refrigerator.

Ingredients

  1. 2 cups quick oats
  2. 2 cups almond flour
  3. ½ cup peanut butter
  4. ½ cup milk
  5. ⅓ cup honey
  6. 1 teaspoon vanilla extract

Instructions

  1. Combine peanut butter, milk, honey, and vanilla in a saucepan over medium-low heat. Cook and stir until melted and smooth.
  2. Mix oats and almond flour in a bowl. Add wet ingredients and stir to combine.
  3. Pour mixture into a 9-inch square pan and press down to flatten. Refrigerate for at least 1 hour before cutting into 9 bars.
  4. Mix in 1/4 cup cocoa for a chocolate version.

The recipes very easy to follow. I did sub out milk with almond milk, and blueberry honey for regular honey. The taste is not bad. Needs more peanut butter in my opinion. I’ll try that next time.

This is an easy, decent energy bar that tastes good. I added cacao nibs to some of mine for some flavor and crunch.
