Ingredients
- 1 cup panko bread crumbs
- ¾ cup grated Parmesan cheese
- 1 medium zucchini, thinly sliced
- 1 large egg, beaten
- cooking spray
Instructions
- Gather all ingredients.

- Preheat an air fryer to 350 degrees F (175 degrees C).
- Combine panko and Parmesan cheese on a plate. Dip 1 zucchini slice into beaten egg then into panko mixture, pressing to coat. Place zucchini slice on a wire baking rack and repeat with remaining slices. Lightly spray zucchini slices with cooking spray.

- Arrange zucchini slices in a single layer in the air fryer basket, working in batches if necessary.

- Cook in the preheated air fryer for 10 minutes; flip the slices and cook 2 minutes more. Repeat with remaining zucchini slices.

First time doing this recipe; agree with others comments; slice thicker and add salt and pepper; that was my 2nd batch; totally awesome. i served with low fat ranch dressing.
I wanted to try “air-frying” in my convection oven so this recipe sounded amazing. I did add a little (2 tsp.) flour and salt and pepper (white and black) to the Panko mix. Additionally, I used a tool that made Crinkle cuts in the zucchini slices. What a phenomenal idea! The extra surface area to collect the egg and Panko mixture added a delightful touch. Since I was faux “air-frying,” I used an olive oil sprayer to lightly coat the chips. I found they needed a little more time in the oven than prescribed. And when I flipped the chips, I did another pass with the oil sprayer. In the end, they turned out perfectly. I served them with an Aioli mayo and Dijon mustard. Yummy!
Use a large Air fryer. A small Air fryer takes forever so you need to put batches in the oven to stay warm. 1 Zucchini takes an hour
A good base recipe but a bit bland for us as written. I also tried s&p and black garlic powder in the egg plus seasoned bread crumbs and that was better. I’ll try again with other combos like adding mustard to the egg, trying other seasonings in the bread crumbs, and changing up dipping sauces.
This recipe was super easy!! We had this with marinara sauce. Delish!!

My first AF experience but they turned out good.Next time will get grated parmesan cheese instead of shredded as I didn’t get very good coverage with the parmesan cheese. Also I’ll place the panko and cheese in a sealable container or zip loc bag and shake to cover. All the same they had a satisfying flavor and crunch.

Surprisingly good! Used other reviewer’s suggestions to add a bit of kosher salt, Italian seasoning and a salt free mixed blend seasoning mix. Cooked 12 minutes with out turning. Used ranch dressing for a dip. The first batch worked best as the dry ingredients stayed dry, but with the dipping of egg in the dry mix, it got so moist that the dry didn’t stick nearly as well. There has to be a good solution for this issue.
I am an air fryer newbie, and this is the first air fryer recipe I have tried. They came out great. I did modify the recipe only slightly, I have celiac so I used Gluten free Panko breadcrumbs. I also used Adobo instead of salt and pepper. Will make again!
These didn’t last long enough for me to get a good picture. I served them with marinara sauce on the side. They were delicious with or without the sauce.
This was a recipe I found to use up so much zucchini from the garden. My boyfriend isn’t the biggest fan of zucchini, but we both LOVED these! They came out perfectly crispy and browned. The only problem I had was that it took 3 batches to cook all of the zucchini slices, so that was an investment of about 40 minutes just for the cooking portion.
I salted the chips first, and l wrapped them single layer in a paper towel to draw out the moisture. Excellent!
Good basic recipe… I’ve added more salt and other seasoning depending on my mood. Cayenne in the Pablo works
Cut back on the parmesan and you have a five star recipe. I used only 1/2 cup and it was still a little too strong. Additionally, it makes way too much panko dredging mix. I would start with half of the recommended panko and 1/4 of the parmesan. What I loved about this recipe is the beautiful crunch and versatility. You can add different spices to the panko mix or change up the cheese for different flavors. Also, you can serve it with different dipping sauces for an appetizer. We have tried both marinara and a yuzu mayo. The cook time was spot on. The amount of browning will depend on how tightly you crowd the zucchini in the air fryer. My first batch was loosely single layered and was cooked to a beautiful golden brown. My second batch was only a few remaining slices and they were definitely significantly browner but not burned. These were good but not fabulous to where I am counting the days until I can make them again. The zucchini cooked nicely. The breading was a little dry. Cooking them for 10 mins & then turning them to cook for 2 more definitely makes a difference. The recipe was good and easy but I had at least twice as much breading than I needed and I had to use an extra egg. Obviously, it will all depend on how much you make and it is easy to adjust as needed. But, word to the wise, start with half the breading the recipe calls for 🙂 I’d make them again but they aren’t going into my heavy rotation.
Great air fryer recipe. Used a little less Panko and cheese but had plenty. Based on other reviews, I did not flip chips in fryer but cooked 12 minutes. A little longer and the chips would have been crispier but probably too brown. Wish I was the one growing the zucchini’s!
I thought these were very good. I used seasoned bread crumbs and added a little Tony Cacheres. I made 1 cup of the crumb mixture and still had some left over. I did not flip them in the air fryer. They came out perfect after 10 minutes. Thanks for the recipe.
