Air Fryer Maple-Chili Pumpkin Seeds

When a friend delivered me 10 pounds of fresh organic asparagus and I still had an open bottle of Burgundy, I came up with this recipe. Any wine that you like is probably acceptable. The cooking time will also vary based on the temperature of your grill and the level of doneness you like.

Ingredients

  1. 1 ½ cups pumpkin seeds
  2. 1 ½ tablespoons salted butter, melted
  3. 1 tablespoon pure maple syrup
  4. 1 ½ teaspoons chili powder
  5. ½ teaspoon ground cumin
  6. ¼ teaspoon salt

Instructions

  1. Preheat an air fryer to 300 degrees F (150 degrees C).
  2. Place pumpkin seeds in a bowl. Pour melted butter over the seeds and stir. Add syrup, chili, powder, cumin, and salt. Stir until evenly combined. Place seeds in an even layer in the basket of the air fryer. Work in batches if necessary.
  3. Cook for 30 minutes, shaking the basket every 10 minutes. Transfer the seeds to a paper towel-lined plate and let sit for 5 minutes.
