My mother, Agnes Walters, taught me how to make Irish soda bread. The sour cream used in its preparation ensures that it always turns out wet and keeps for several days.

Ingredients

  1. 6 medium jalapeno peppers, halved and seeded
  2. 6 ounces cream cheese, softened
  3. 1 ounce shredded Cheddar cheese, or to taste
  4. 3 slices salami
  5. 6 slices bacon, cut in half lengthwise

Instructions

  1. Preheat an air fryer to 390 degrees F (199 degrees C) according to manufacturer’s instructions.
  2. Fill each jalapeno half with some cream cheese and Cheddar cheese. Place 1/2 a slice of salami on top of each pepper, wrap with a piece of bacon, and secure with a toothpick, if necessary.
  3. Layer jalapeno poppers inside of the preheated air fryer and cook until bacon is browned and cheese is melted, 10 to 12 minutes.
  4. You can use any shredded cheese you like.

Was great! Only changes I made was eliminated the salami since I was out, and added Cajun seasoning to the cream cheese mix. I let it cook about 2 minuets longer than it called for due to air fryer size. (I have 26 quart).

I really liked the addition of salami. I added more cheese because an ounce didn’t seem worth the trouble. Next time I would pre-cook the bacon beforehand to get a good crisp on it.
