These vegetarian nachos are delicious and quite addictive. I am able to consume them once a week. Although you can use any toppings you choose, our favorite combination is refried beans, jalapeo salsa, and pepper jack cheese. Also tasty when topped with diced jalapeo or pepperoncini slices.

Ingredients
- 2 (15 ounce) cans fat-free refried beans
- 1 (7.75 ounce) can jalapeno salsa (such as El Pato®)
- 1 (12 ounce) bag tortilla chips
- 1 (8 ounce) package shredded pepper Jack cheese
- 1 green bell pepper, chopped
- 1 onion, chopped
- 1 (8 ounce) package shredded lettuce
- 1 (4 ounce) can sliced black olives
Instructions
- Preheat the oven broiler. Set an oven rack about 6 inches from the heat source. Line a rimmed baking sheet with aluminum foil.
- Combine refried beans and salsa in a saucepan over medium heat; cook and stir until blended and heated through, about 5 minutes.
- Arrange tortilla chips on the prepared baking sheet. Spoon refried bean mixture over chips. Sprinkle with pepper Jack cheese, green bell pepper, and onion.
- Cook under the preheated broiler until cheese is melted, 3 to 5 minutes. Garnish with lettuce and olives.
- If we don’t have canned salsa, my husband (the recipe creator) uses juice from the jar of the pepperoncinis or jalapeños.
- You can try these with meat, too. They are great with grilled chicken.

Love this recipe. We swapped out the salsa with salsa con queso and it was amazing (idea of the lovely K) we will probably make that a standard with this meal … only downside is that we ate so much we ruined our dinner appetite
made it as is – only two of us so had a lot of waste. Will apportion it better next time. Too much of the beans. Really good. I added some salsa on top of mine.

Great recipe! Tasty and satisfying. Serves 5 or 6, instead of the 4 mentioned. Found in markets since you wrote recipe various products with jalapenos (cheese, corn chips), so had option of using regular salsa and omitting separate jalapenos. Am using sour cream or avocado as garnish. Another comment noted that most canned refried beans are NOT vegetarian. So can use home made refried, or plain canned red beans.
Loved these but I have a couple of things to say here. I used jalapeno in place of the bell but that is the only change I made. I personally just felt it was the right call. I am in no way a vegetarian but feel it necessary to point out that most all of the refried beans you buy in the store are made with lard. Again, I have no issues eating lard but it is not vegetarian. You’d need to buy special beans or make your own if you are a vegetarian. These were good and I will most definitely make them again.
