In a rush to put up some football snacks, I came up with this RO*TEL bean dip dish. It is more like the wonderfully thin bean dip served accompanying bowls of salsa at Tex-Mex restaurants than it is like the thick bean dip you buy in a can. It may not be fancy, but it is certainly quick and delicious!

Ingredients
- 1 (10 ounce) can diced tomatoes with lime juice and cilantro (such as RO*TELĀ®)
- 1 (15 ounce) can black beans, rinsed and drained
Instructions
- Drain RO*TEL, reserving the liquid.
- Combine black beans and tomatoes in a blender; process until smooth. Add in reserved liquid until dip reaches desired consistency.
- You can serve the dip immediately, refrigerator overnight, or heat and serve warm.
