Ingredients
- 1 pound ground pork
- 1/2 pound ground venison
- 2 teaspoons salt
- 2 teaspoons black pepper
- 1 1/2 teaspoons dried sage
- 1/2 teaspoon dried basil
- 1/2 teaspoon chili powder
- 1/2 teaspoon Cajun spices
- 1/2 teaspoon onion powder
- 1/8 teaspoon cayenne pepper
- 1/4 teaspoon mustard (recommended: Coleman’s)
- 1 tablespoon grapeseed oil
Instructions
- Combine pork, venison, salt, black pepper, sage, basil, chili powder, Cajun spices, onion powder, cayenne pepper, and mustard in a large bowl and mix well. Form into patties, logs, or fill sausage casings.
- Heat grapeseed oil over medium-high heat in a large skillet. Cook sausage until browned and cooked through.

Reviews
I only had 1 lb of pork, so I reduced the spices proportionally and used garlic powder instead of cayenne. The result was a very savory sausage with great flavor, but I thought it was too salty. Next time, I’ll reduce the salt. But I’ll definately use it again.
