Upside-Down Tomato Tart

Ingredients

  1. 2 tablespoons bacon drippings
  2. 4 cups heirloom cherry tomatoes
  3. 1/2 large sweet onion, sliced into thin half-moons
  4. 1/2 teaspoon lemon pepper seasoning
  5. 1/4 teaspoon red pepper flakes
  6. Kosher salt and freshly ground pepper
  7. Cooking spray
  8. Juice of 1/2 lemon
  9. 1/2 cup grated asiago cheese
  10. 1 9-inch-square piece frozen puff pastry (half of a 17-ounce package), thawed
  11. Chopped fresh basil, for topping

Instructions

  1. Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. Microwave the bacon drippings for 8 to 10 seconds to melt, if necessary. Combine the tomatoes, onion, bacon drippings, lemon pepper, red pepper flakes, 1/2 teaspoon salt and 1/4 teaspoon pepper in a large bowl. Spread on the prepared baking sheet and roast until slightly softened, about 10 minutes. Let cool. Reduce the oven temperature to 375 degrees F.
  2. Coat the bottom and side of an 8- or 9-inch cast-iron skillet with cooking spray. Toss the tomato mixture with the lemon juice and asiago; spread evenly in the skillet. Place the puff pastry on top; trim the overhanging pastry with kitchen shears.
  3. Transfer the skillet to the oven and bake until the pastry is dark golden, about 50 minutes. Let cool about 5 minutes, then place a large plate or platter on top of the skillet and invert the tart. Sprinkle with basil and let cool, about 5 more minutes. Cut into wedges.

The taste was delicious so I don’t want to knock that. After flipping the pastry over the tomatoes made the puff pastry so soggy so quickly. Any advice on how to avoid that?

I made this for an appetizer for a dinner on the lawn with neighbors. 

Taste was excellent. Hard to turn over onto platter without all the juices going all over the place. Would like to know what the answer for that is. Underside of tart a little soggy because of all the juice. Threw under the Broiler for a few minutes   Did help but  still kind of a soggy mess. would like to know how to cook some of the juices out.
Taste was divine. Need to tweak

Simple, yet incredible! Puff pastry can be found in the freezer section of the store and it’s worth the splurge. I blister the cherry tomatoes, usually buy them from the farmers market, and I add pieces of cooked bacon. I actually cook the bacon, then add the tomatoes and let them blister. Yummy!!! 🙂
