Sweet and Spicy Onion Relish

Ingredients

  1. 2 medium yellow onions or sweet onions, when available
  2. 1/4 cup vegetable oil
  3. 1 teaspoon freshly ground black pepper
  4. 1 tablespoon crushed red pepper flakes
  5. 3 cloves fresh garlic, crushed
  6. 1 cup light brown sugar
  7. 48 ounces root beer
  8. Hot dogs, cooked, for serving
  9. Brown mustard, for serving
  10. Mayonnaise, for serving

Instructions

  1. Peel the onions, cut in half and slice into 1-inch pieces. Add the onions and the vegetable oil to a large saucepan, over medium-low heat, and saute until soft. Stir in the black pepper, crushed red pepper flakes, garlic and brown sugar until incorporated. Add half of the root beer and let reduce until starting to get thick. Stir in the remaining root beer and continue to reduce until the liquid is almost completely evaporated.
  2. Serve on top of good quality, natural casing hot dogs with a good brown mustard and a little mayonnaise, to taste.

This wasn’t the recipe that was on the show. Here is what I used according to the items used on the episode. 1/2 c each of sweet pickle relish,chopped onions,chopped carrots and yellow mustard. 2 garlic cloves minced. 2 tsp oregano and 2 tsp of celery seed. I did 3/4 c of finely chopped cabbage and 1-2 tbsp of chili powder(to taste A splash of apple cider vinegar and mix. I let it sit overnight before serving on all beef hotdogs. Yummy.

First try was a disaster. By the time the full mixture cooked to finale it turned to a rock in the bowl. Looked much better after the first addition of root beer. Probably should have stopped there.

the recipe turned out fairly well, althogh 48 ounces of rootbeer was a lot, could be cut in half, good flavor, and texture, i like it a lot
